Weekly menu for 10/9/17
Sunday - out Monday - stir fry chicken and veggies with rice noodles Tuesday - white bean pesto pasta (Pearljamchick you have to check out this site, her stuff looks amazing!) Wednesday - ST Cuban black beans and rice with guacamole Thursday - leftovers Friday- grilled sea bass, roasted potatoes and broccoli Saturday - ?? either out our something from the freezer

MrsT809 - that site is amazing!!! Let me know how the bean pesto turns out. It sounds really great! The pesto itsel would also be a nice sandwich spread, I would think!
Sun - at a friend's house for Indian takeout Mon - salad with roasted peppers, quinoa, avocado Tue - homemade curried chickpea burgers, some sort of carrots on the side Wed - salad with spicy Boca patties Thu - noodle soup Fri - probably takeout of some sort Sat - not sure

Sunday: Pan Seared Scallops and Penne Alla Vodka
Monday: ST Chicken Soup w/ Spinach & pastina
Tuesday: ST Buffalo Chicken w/ Spinach Salad APplegate chicken tenders, peas and Sweet potatoes for the kids
Wednesday: Hungry Girl Chicken Sausage and Shrimp Jambalaya broccoli cheddar soup & grilled cheese for the kids.
Thursday: Chicken Tacos w/ Cannelini Beans & a veggie on the side.
Friday: Steak, Spinach Salad & Raviloi w/ Red Sauce
Saturday: Having friends over for dinner

We were away for the weekend, so no shopping was done. Tuesday : pork chops, buttered noodles, red cabbage Wednesday : grilled chicken cutlets, salad Thursday : Hofstra's one pot garlic parmesan pasta with leftover chicken cutlets. Friday : pizza Saturday : ? filet mignon, garlic mashed potatoes, balsamic tomato salad OR maybe out with friends Sunday : roast chicken, roasted lemon potatoes, roasted veggies.

Can you post recipe for street corn?
I mix mayo, a dash of chile powder and lime in a bowl. Grill corn in the husk first to steam it a bit, peel back the husks to char it on all sides. While the corn is still hot, I douse it with the mayo mixture and sprinkle with Cotija cheese and let that sink into the hot corn. Serve with lime wedges.
I am sorry I don't have amounts. I really don't measure

Sunday: baked ziti with hot chicken sausage Monday: chicken tacos, street corn Monday: Chicken Francaise, penne with broccoli garlic and oil, tomato salad Tuesday: Pork loin roast, roasted potatoes, steamed broccoli Wednesday: Pasta with chick peas, roasted skinny sausage, broccoli rabe Thursday: Rotisserie chicken from the supermarket, steamfresh and 90 second rice Friday: Hot dogs and french fries or tater tots Saturday: Brazilian!!!!!!!! We are going to a backyard 40th birthday party and I swear they're gonna have to carry my fat ass onto a flatbed I love Brazilian Sunday: Hangover soup

So I wanted to love it and it was so pretty but it was just okay. The beans in the pesto made it very heavy so I think I might have liked it better keeping the beans separate. I added some sun dried tomatoes when I had it for lunch and that helped. I used the minimalist baker recipe for parmesan and that was yummy.
