How exactly do you make your old school pan fried/breaded chicken cutlets?
Flour? Breadcrumb only? What kind of oil etc.?

How exactly do you make your old school pan fried/breaded chicken cutlets?
Pound thin, dip in egg wash, then seasoned breadcrumbs and fry in good quality olive oil.

Pound thin, dip in flour, then egg wash, then breadcrumbs - italian breadcrumbs with fresh parsley and grated parmesean cheese. Fry up in olive oil. DELISH.

I use the thin sliced cutlets. I dip in flour, then egg, then breadcrumbs. I fry them in canola oil.

Someone here made the suggestion to double dip them. Pound thin, egg, panko, egg, panko then fry in veg oil (I have read olive oil isn't good for frying). Comes out soooo good.

I use the think cut chicken cutlets. I dip in egg mixed with salt and pepper, then a combination of italian seasoned bread crumbs, panko, and parm cheese. Then fry in veg oil.

How exactly do you make your old school pan fried/breaded chicken cutlets?
Thin cutlets seasoned with salt and garlic powder. Dredge in flour, shake of excess, dip in beaten eggs, coat in italian breadcrumbs with parmesean cheese added. Fry in olive oil until golden. Drain on paper towels to absorb extra oil.

How exactly do you make your old school pan fried/breaded chicken cutlets?
I often won't fry them (bake instead), but sometimes instead of egg I will use bbq sauce or an egg-dijon mix to dip them in before the breadcrumbs. Except I will use part breadcrumbs, part panko.
I will also sometimes add in crunched up french's fried onions.

Lightly salt chicken cutlets then dip in egg wash then in Plain breadcrumbs mixed with a handful of grated parm cheese. Fry only in vegetable oil. Frying in olive oil is not healthy for you, olive oil can change when heated to frying temps and actually give off harmful toxins I have read.

I've never not used Olive Oil to fry my cutlets. I can't imagine Vegetable would give them the same great taste, does it?

this plus I put them on metal cookie rack to let the oil drip off when I take them out and they come out a little crunchy

I use canola but its funny cause I hate them fried in olive oil, my sil makes them with olive oil and when I eat them all I taste is the oil not the chicken I find it too overpowering I used to use vegetable oil when I first started cooking on my own they tasted great then switched to canola cause it was a little better for you

IMO yes. I find the olive oil leaves them too greasy, plus from what I have read, it just isn't good to get olive oil too hot because it's not meant to fry, releases toxins when heated too high.

Never experienced this ever, never. I'll try it and see if I taste a difference. Maybe it's also because olive oil is how my grandfather's made them my whole life, so I'm just used to it, and that's why I like. I also never find them greasy, I always put them on paper towels after frying... same as I do for my bacon mmmmmm bacon....

My mom makes the BEST chicken cutlets and, even though she taught me how to make them, they're never the same as hers!
Thin chicken breasts seasoned with salt and pepper, dipped in flour, then dipped in egg/milk mixture and coated in Italian style breadcrumbs, fried in vegetable oil with chopped garlic.

I swear that 4C seasoned breadcrumbs make a difference. I season them with granulated garlic, parmigiano, and fresh parsley too. Flour, shake off excess, dip in egg wash bread crumbs. I bake them on a cookie sheet sprayed with olive oil Pam drizzled with a little olive oil.
