I need to get the crumb cake recipe from my mom and the farina muffins & chocolate chip cookie pie from my sister. I left messages on their machines but they haven't gotten back to me with the recipes yet.

DO you have an electric oven or gas? I should have mentioned that things can cook quicker in an electric...

Most of what I bake is estimates too since I usually just watch it. I have such problems getting my kitchen timer to work properly.

I got the farina muffin recipe today from my sister and will post it tonight or tomorrow.

Farina was the only thing I would eat when I was younger. I think I lived on it for like 3 years straight!

Okay --- HERE it is!

These are SOO awesome!!!

They are very good hot out of the oven with a little bit of melted butter on them!

I double the recipe.

Makes 12 regular sized muffins.

1 c. sugar
1/2 c. butter or margarine
1 c. milk
1 egg
1 1/2 c. all purpose flour
3/4 c. farina
1/8 tsp. salt
2 tsp baking powder

Preheat oven to 425

Cream together butter and sugar. Mix in milk and egg.

In a seperate bowl mix together dry ingredients, and then fold into wet ingredients.

Bake in greased or lined muffin tins for 20-25 minutes or until the tops are golden.
ENJOY and please let me know if you try it!!! Chat Icon

ETA a picture since I baked them today. They got a little too dark for my taste --- I'm still getting used to this oven! I've only baked in it a few times.

I just dug up my old binder with my yummy family baked recipes in it to post for skygirl, and I'm reminded of all of the family baked goods that I love to make and EAT!

How about we post a thread of our favorite baked recipes! Muffins, breads, cookies, cakes, etc.

I'll cut and paste my Banana Bread recipe and work on getting some other ones type up as well!

This is the recipe for my Banana Bread -- which a lot of people RAVE about!

3/4 c. sugar
1 1/2 c. mashed bananas (3 large)
1/2 c. oil (i use canola and you can use applesauce too)
2 eggs
2 cups all purpose flour
1/2 cup chopped walnuts (optional)
1 teasponn baking soda
2 teaspoons vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt.

heat oven to 325

grease a loaf pan with shortening or margarine (i spray with pam)

mix all ingredients in a large bowl. start with dry and add oil, bananas, eggs, vanilla and walnuts.

bake for 70-80 minutes. test with a cake tester or wooden pick in the center of bread. let cool for at least 10 minutes before serving.

makes one loaf.

source: Mrs. Cohen, my 7th grade Home-Ec teacher. Yes, I've been making this recipe since 7th GRADE!

also sometimes I add chocolate chips to this and it's great too!







Just wanted to let you know that I finally got to make this- and it is incredible+ it was simple.
Thanks for the recipe and the tip on how to smash the bananas using the ziploc bag- ingenious!!!!!

is that really 1/8 CUP of salt???

I have never had a recipe with that much salt before!!

I add a cup of sour cream and sometimes I add some chocolate chips!

Cinnamon Jumbles (My DH HATES baked goods but loves these "cookies" and also takes them into work with him and they get stolen from all of his co-workers. They are an OLD OLD OLD family recipe going back 4 generations now)

2 1/2 c flour + 1/2 scoop (this is my grandma's recipe so 1/2 scoop is usually just under 1/2 cup -- I have one of the scoops she used!)
1/2 teaspoon baking soda (heaping)
1 egg
1 1/2 teaspoon vanilla
1/2 cup oleo (I use margarine, oleo is old school)
1 c sugar
2 cups sour cream

sift together dry ingredients. cream sugar and margarine and add egg,vanilla and milk. to this mixture add flour and blend well. sprinkle with 1/2 cup sugar and 1 tsp cinnamon (we always keep large amounts of this premixed in a salt shaker in our house because it's also good to make cinnamon toast)

chill dough and drop by rounded teaspoonfuls on greased cookie sheet. bake at 400 for 8-12 minutes.

if you don't chill dough you'll need to add more flour since it should be a pretty stiff dough.

this recipe is from betty crocker 1958 and adapted by my grandmother.

my mom also used to add blueberries to this when I was very little since her blueberry muffins were too big for me -- just gently fold in 1 cup of rinsed blueberries before baking.

1- The recipe calls for sour cream but you say to add milk in the directions - which one? I did the sour cream.

2- The sugar cinammon mixture - does that just get put on top of the dough before it gets chilled? how does every "jumble" get the cinamonny goodness?

and 3- how long to chill the dough for??

use sour cream. my mom sometimes uses buttermilk and that's why it said milk in the directions, but i've always used sour cream and they come out really good and get a better texture.

chill the dough in the bowl you mixed them in. then after chilling (i'd recommend overnight) drop them in rounded teasponnfuls on the baking pan, and sprinkle with the cinnamon sugar mix.

i will update the recipe!

Jessica's Marshmallow Clouds (From My Mrs. Field's Cookie Cookbook)

I call them Rocky Road cookies because I sometimes add crushed walnuts to the recipe.

3 cups all purpose flour
3.4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1 cup granulated sugar
1 cup packed light brown sugar
2 sticks (1 cup) salted butter, softened
2 large eggs
2 teaspoons vanilla extract
12 ounces mini semisweet chocolate chips (about 2 cups)
8 ounces mini marshmallows, frozen (very important that they are frozen)

i also add probably 1/2 cup chopped walnuts but i don't measure--just eyeball it.

preheat oven to 350

keep the marshmallows in the freezer until you are ready to add them

combine flour, cocoa and baking soda in med bowl, set aside

combine sugars in a large bowl, using electric mixer blend in butter, scrapingd down sides of the bowl. add eggs and vanilla and beat at the medium speed until light and fluffy.

add the flour mixture and chocolate chips. blend together at a low speed until combined. batter will be very stiff.

gather 4-5 frozen marshmallows in the palm of your hand and cover with a heaping tablespoon of dough. wrap the dough around the marshmallows, completely covering them to make a 2-inch diameter ball.

place on ungreased cookie sheets 2 inches apart and bake 10-12 minutes. cool on pan for 2 minutes and then transfer to a cool, flat surface.

THESE ARE AMAZING! You open them up and marshmallow goo comes out of them! Everyone always LOVES them!

Makes 3.5 dozen cookies



Melissssaaaaa! Help!

I am making these right now and my clouds are exploding! What am I doing wrong? Here is a pic, are they too small? If anything I thought they might be too big cause it doesn't look like I will get 3.5 dz out of the dough. (although I never get the amt any recipe says LOL)
I rolled em nice and everything was covered. but they seem to split.
THEY ARE AWESOME!!!!!!!!!!!!! i just cannot get them to stay together. I was holding some together until they cooled Chat Icon

No no that's totally OK. Mine explode too and I never get 3.5 dozen out of them. I actually double the recipe because everyone loves them --- but they are a bit explosive.

ah ok! and actually after they cooled and Iw as packing them the next day the white marsh turned clear and I see how they are supposed to look.

I brought them to a block party today and everyone LOVED them!

Zucchini Bread makes 2 8X4 loaves

3 eggs
1 cup veg oil (i use canola)
2 cups white sugar
2 cups grated zucchini
2 teaspoons vanilla extract

1 teaspoon salt
1/4 teaspoon baking powder
3 cups all purpose flour
3 teaspoons ground cinnamon

preheat oven to 325. grease and flour 2 8$4 inch loaf pans

beat eggs until light and fluffy in a large bow. mix in oil and sugar. stir in zucchini and vanilla. combine flour, cinnamon, soda, baking powder, salt & nuts and stir into the egg mixture.

bake for 60-70 minutes or until cake tester comes out clean.




Question: In the instructions you mentioned combine flour, cinnamon, soda..... Are you talking about Baking Soda? If so, I don't see it in the list of ingredients.

i did the same thing and just used sour cream - but oops...i mixed in the cinamon mixture....

now help - my cookies (made them yesterday!) are soft and stuck together in the tin!
