Award Winning SOft Chocolate Chip Cookies ( got the recipe from allrecipes.com in 2001 and they are the only choco chip cookies I make now. They stay soft because of the pudding in the batter)
6 dozen cookies
4 1/2 c all purpose flour 2 teaspoons baking soda 2 cups butter, softened 1 1/2 c packed brown sugar 1/2 c white sugar 2 (3.4 ounce) packages of instant vanilla pudding (you can use chocolat to make chocolate choco chip cookies or any other flavor to get creative and change it up) 4 eggs 2 teaspoons vanilla extract 4 cups semisweek chocolate chips 2 cups chopped walnuts (optional)
preheat oven to 350 sift together flour and baking soda, set aside
in large bowl cream together butter, brown sugar white sugar. beat in the instant pudding mix until blended. stir in the eggs and vanilla. blend in the flour mixture. finally stir in the choco chips and nuts.
drop cookies by rounded teaspoonfuls onto ungreased cookie sheets
bake for 10-12 minuts or until golden. edges should be golden brown.
keep in tupperware and they'll stay super soft and chewy for as much as a week and a half.
Could you clairfy something: Do you have to make the pudding first and then put it in? -or- Do you just drop the pudding mix right into the mixture?

just put the powdered pudding mix in ---- don't make it.

I made these over the weekend and they are so moist and yummy! Everyone loved them!
Carrot Muffins 1 1/2 c. sugar 1 c vegetable oil (i used canola) 3 large eggs 2 cups all purpose flour 2 teaspoons ground cinammon 1 teaspoon baking soda 1 teapspoon vanilla 1/2 teaspoon salt 3 cups shredded carrots (5 large) 1 cup coarsely chopped nuts (I omitted due to the baby's allergies)
You can cover with cream cheese frosting but I just left them plain and loved them like that.
Preheat oven to 350. Use baking cups or grease muffin cups --- I use the baking spray with flour in it by Pam because I hate muffin cups.
Bake for 20-25 minutes or until tops are golden brown and a toothpick inserted comes out clean.
Let me know if any of you need the cream cheese frosting recipe, although I prefer them without since I give them to the baby and also froze some to take for breakfasts in the morning.
It made about 15 muffins, but I used large muffins tins.

thanks again for taking the time to post all these recipes! I have 2 grandmothers that have everything, so I have been baking all night to send out packages tomorrow as gifts..I am sure they will love it.

Great thread!!!! I'll add a few. This recipe i got off here last fall. I made it and it was delicious!
Pumpkin Coffee Cake
TOPPING: 1/4 cup packed brown sugar 1/4 cup sugar 1/2 teaspoon ground cinnamon 2 tablespoons cold butter or margarine 1/2 cup chopped pecans
CAKE: 1/2 cup butter or margarine, softened ?1 cup sugar 2 eggs 1 cup sour cream 1/2 cup canned or cooked pumpkin 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon pumpkin pie spice 1/4 teaspoon salt
DIRECTIONS In a small bowl, combine sugars and cinnamon. Cut in the butter until mixture resembles coarse crumbs. Stir in pecans; set aside. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the sour cream, pumpkin and vanilla; mix well. Combine dry ingredients; add to creamed mixture alternately with sour cream mixture. Beat on low just until blended. Spread the batter into two greased and floured 8-in. round cake pans. Sprinkle with topping. Bake at 325 degrees F for 40-50 minutes or until a toothpick inserted near the center comes out clean.

One of DH's favorite ones that I make
APPLE CRUMB CAKE BATTER: 1/2 c. soft butter 2 eggs 2 tsp. vanilla 1 c. sugar 1 c. sour cream 2 c. sifted flour 1/4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt FILLING: 1 1/2 c. peeled, chopped apples (fresh peaches, plums, cherries or berries may also be used) 1 tsp. cinnamon 1/2 c. sugar 1/3 c. chopped pecans or walnuts (optional) TOPPING: 1/4 c. softened butter 1/2 c. flour 1/2 c. Bisquick or pancake mix 1/3 c. sugar 1. Cream butter, sugar, eggs, sour cream and vanilla in large mixing bowl. 2. Sift together flour, baking powder, salt and baking soda.
3. Stir flour mixture into butter mixture and blend until smooth.
4. Combine apples, cinnamon and sugar in small bowl.
5. Spread half of the batter into lightly greased 9 inch square pan.
6. Top with apple mixture.
7. Spread remaining cake batter on top of apples.
8. In small bowl, blend butter, flours and sugar to make crumbs with pastry blender or large fork. Mixture should be crumbly.
9. Top cake with crumbs. Lightly dust crumbs with cinnamon.
10. Bake at 325 degrees for 45 minutes or until cake tests done with toothpick.

Banana Bread
Ingredients 1 cup granulated sugar 8 tablespoons (1 stick) unsalted butter, room temperature 2 large eggs 3 ripe bananas 1 tablespoon milk 1 teaspoon ground cinnamon 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt Directions Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.
Spread slices with honey or serve with ice cream.
Makes 1 loaf.
