It sounds like you never filed the appropriate paper work to avoid paying the tax and if you file it now they could go after you for all the back taxes. I would highly doubt they would research your home church from Long Island and figure out your parish and contact them. If you are worried about that why not contact your home church and ask them to expunge your records? But while these types of records might be protected in Germany they are certainly not protected in the US. Most records here, legal and otherwise, with the exception of medical records, are public. So if someone from Germany were to contact your parish and ask them I think there is a decent chance they could send them.

Yeah, that’s sort of the issue. However, I did say no religion. But there is no definition of what makes you a religion. I am in contact with my church.
