Different ways to cook veggies
I need help with different ways to cook fresh veggies. I usually buy the frozen stuff
I picked up asparagus and green beans from the store this morning. What are some ways to cook them?
I already tried the over roasted brocooli that someone posted on here and loved it.
What other veggies do you cook and how?

Just cooked asparagus the other night.
put on a baking sheet..sprinkle with salt and a little EVOO...bake on at 400 until desired tenderness and then I dribble some balsamic vinegar over them. .yummy!!
Green beans.. cut up some garlic.. and put in tomato sauce..stove top or microwave is fine.. yummy!!

asparagus into an omlet is great. my mom also does asparagus with jasmine rice. you can also wrap a few stems of asparagus with some procutto and put it in the ovwn and cook until tneder
Stringbeans meat and potatos with red sauce awsome
boiled stringbeans with evoo and vinigar.

My favorite asparagus is a quick sautee in olive oil with lots of fresh garlic.
Green beans I like to steam or blanche quickly and toss with butter, toasted almonds and some S&P. Or a nice fattening (but delicious) Green Bean casserole. Or a raw bean salad with olive oil, cider vinegar, fresh garlic, salt and pepper.
Or cook up some pancetta until crispy - remove pancetta from pan and throw in the veggie (green beans or asparugus will work) sautee to desired doneness and then crumble the pancetta over it.

I like to roast a lot of my veggies in the oven on a cookie sheet- 400 degrees with different seasonings and EVOO for different veggies.
Broccoli - minced garlic, salt, pepper and evoo
Green Beans - salt, pepper, garlic powder, evoo, and thyme
Asparagus - just salt, pepper, and evoo
Zucchini - melt evoo and some butter in a pan and sautee sliced zucchini with some sliced onions.

I love to roast veggies. I usually do this when I make a chicken dish. I cut up carrots, celery, an onion and couple of red potatoes. Toss them with EVOO and salt and pepper, and put on a coookie sheet. Roast on 400 for 25 mins. Everything is so flavorful and delicious.

Thanks for all the great ideas
another question, how long do fresh veggies stay good for? Can I buy them at my weekly food shopping trip or buy them the day I am going to cook them? How do you store them...in the fridge?

they can last about 5 days.... keep your asparagus is a cup of water, you want the water to cover the bottom inch or 2.... then they will last, if not they will get all mushy!
