Irish Soda Bread
I made this last year and it came out great. Figured I'd post it and we could share our Irish Soda Bread recipes for St Patrick's day.
Ingredients: 4 ½ cups flour (sifted) 2 teaspoons Baking Powder 1 teaspoon Baking Soda ½ teaspoon Salt ¾ cup Sugar 6 tablespoons Butter 1 cup Raisins (separate the clumps) 1 cup Currents (separate the clumps) 2 cups Buttermilk
Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, salt and sugar. Mix thoroughly. Combine raisins and currents in a plastic bag along with 1-2 tablespoons of dry flour mixture. Shake until well coated. Knead butter into flour mixture until grainy. Add raisins/currents to flour/butter mixture. Add buttermilk and mix thoroughly. Separate in to two loaf pans or one 9” x 9” pan (lightly coated with flour). Your preference of shape. Bake at 350 degrees for approximately 60 minutes. Check occasionally with a cake tester to see if loaf is completely baked through.

Oh good! I lost my irish soda bread recipe and I was looking for another one! Think you can make it without the currants? I have everything except those at home.

I'm sure you can, the Currants just add a little extra flavor. I would add the same amount of raisins in place instead.
