Milk allergy moms - some dinner ideas...
DD has become much more picky with food (she used to eat pretty much everything before her elimination diet) but has really cut back on what she will eat and what she likes. I really need some new ideas....
So those who have children with milk allergies - can you post some of your favorite meals?

We are very close to vegan, so most of our meals are meatless. Here's what we eat:
We just tried quinoa vegan meatless meatballs tonight with pasta, DS loved it!
rice & beans baby pasta shells with asparagus, white beans & marinara sauce baked, stuffed beefsteak tomatoes cabbage soup chili portobello burgers (chipotle or balsamic) minestrone soup eggplant parm roasted veggie pizza (I make on flatbread or we order out) broccoli w/ white beans & pasta, garlic & oil lentil soup lentil sloppy joe's pasta e fagioli all different kinds of pasta

Do you have the recipe for the meatballs or the cabbage soup? I have tried pasta with veggies and marinara sauce but she isn't big on tomato sauce - she used to like it. She likes soup so maybe the cabbage soup would work. How do you make the eggplant parm? I tried the diya (sp?) shredded cheese with her and it wasn't a big hit. I have made her pizza with veggies and chicken or applegate farms salami (no preservatives) and she used to like it without cheese but then she stopped eating that too. Right now she eats mostly chicken drumsticks and steamed veggies or steak and broccoli and zucchini. She is a big fruit eater which is good but seems stuck on peanut butter or turkey sandwiches for lunch, and cheerios and fruit and soy milk for breakfast. I would like to expand but she complains about everything it seems. She used to be such a good eater before this whole thing happened. She used to love turkey meatballs but since I can't put in the parmesean (she doesn't like the soy alternative) or the milk into it the taste is completely different now and she doesn't want to eat it.

I do pasta w/ garlic & oil a lot. Trader Joe's has frozen grilled egglplant & zucchini that is delicious, and I add cannellini beans for protein. The eggplant parm I don't make with cheese, and I use panko breadcrumbs instead. What about adding nutritional yeast? It's high in protein and I've heard it tastes a lot like cheese. I've never used it (only because I always forget to look for it at the store), but maybe you could FM jerseychick, she's the one that told me about it. I haven't tried any cheese alternatives, but I know she has, so you can ask her about that.
The pizza I roast the veggies in the oven to where the edges just start to burn, and they come out nice and sweet. Maybe she would like it like that?

Quinoa Veggie "Meatballs"
- 1/2 cup quinoa - 1 cup water (or chicken stock) - 5-6 large button mushrooms, cleaned and thinly sliced - 1 small pat of butter or a drizzle of olive oil to fring - 1/2 bag of fresh baby spinach, chopped - 1/2 red pepper, finely diced - 1/4 cup onions, diced - 2 tbs pine nuts (almost any kind of nut would work well here too!) - 2 eggs - one for egg wash - A couple generous pinches of crushed red pepper - 1/2 tsp dried oregano - 1/2 tsp dried rosemary - Salt and pepper to taste
Cook quinoa according to package using either water or chicken stock and set aside to cool a bit. Fry up the onions and mushroom slices in a little bit of butter or olive oil until the onions have softened and the mushrooms have browned and set aside. In the same pan, wilt the spinach until it just softens. In a large bowl, combine the fried mushrooms, wilted spinach, red pepper and onions. Add the oregano, rosemary and crushed red pepper. Salt and pepper to taste. Add the pine nuts and combine mixture. Add the cooled quinoa and mix in one of the eggs. Shape the mixture into even-sized balls and place on a greased and foil lined baking sheet. Make an egg wash by mixing together the remaining egg and a splash of water. Using a brush, paint the meatballs with the eggwash. Bake at 400 degrees until they are cooked through, browned and slightly crispy.
DS is allergic to eggs too so I used cornstarch as a binder, and also for the egg wash.

Cabbage Soup
3 small onions 4 carrots ¾-1 head of cabbage 6 cups vegetable broth 1 can cannelleni beans 1 can diced tomatoes (I used fire roasted) 1 bay leaf salt, pepper, garlic powder
1. Chop carrots; thinly slice/shred cabbage. Put off to side 2. Slice and sautee onions 3. Put 6 cups broth in large pot, on med-high heat. Add bay leaf, onions and carrots. Let cook for 20 minutes. 4. Add diced tomatoes and beans. Cook for 10 more minutes. 5. Add cabbage, salt, pepper, and garlic powder to taste. Cook for 15-20 minutes more (until cabbage is tender).

I know you didn't ask me for this recipe, but this is a really good lentil soup. She might like it.
Lentil Soup Ingredients
* 2 tablespoons olive oil * 1 cup finely chopped onion * 1/2 cup finely chopped carrot * 1/2 cup finely chopped celery * 2 teaspoons kosher salt * 1 pound lentils, picked and rinsed * 1 cup peeled and chopped tomatoes * 2 quarts chicken or vegetable broth * 1/2 teaspoon freshly ground coriander * 1/2 teaspoon freshly ground toasted cumin * 1/2 teaspoon freshly ground grains of paradise
Directions
Place the olive oil into a large 6-quart Dutch oven and set over medium heat. Once hot, add the onion, carrot, celery and salt and sweat until the onions are translucent, approximately 6 to 7 minutes. Add the lentils, tomatoes, broth, coriander, cumin and grains of paradise and stir to combine. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes. Using a stick blender, puree to your preferred consistency. Serve immediately.
