Need help with a menu for a dinner party for friends
I am having 2 friends over from HS that I haven't seen in years. My friend doesnt eat red meat which throws my menu plan out the window...I was going to make a london broil or other kind of steak.
Any nice dinner ideas w/out red meat?

Do they eat chicken? What about chicken cutlet parm with pasta a large green salad and garlic bread? For appetizer you could make shrimp cocktail or fresh mozzarella and tomato sliced sprinkled with a little extra virgin olive oil and balsamic vinegar or stuffed mushrooms

I don't eat red meat, either, so I usually make chicken or something with ground turkey. Some of my favorites are: Mexican Lasagna: Rachael Ray has a good recip for this using ground turkey
Lemon chicken: I flour chicken cutlets and brown them in a little bit of olive oil, add the juice of 2 lemons, a little white wine, and a little chicken broth. Add salt to taste. Serve over brown rice and with broccoli.
Chicken and cheese: I slice some chicken breasts thin, dip them in Italian dressing, bread them and then roll them up with a piece of cheese. I use whatever cheese is in the house, be it American, cheddar, smoked gouda, etc. Bake on 375 for 45 minutes. It's delicious. Everyone I serve it to loves it.
"Thai" chicken: Mince three cloves of garlic and about two tablespoons of fresh ginger root. Add some olive oil to a pot, sautee the garlic and ginger root, then add about 2lbs of chicken breasts that have been cubed. Brown the chicken adn then add red pepper flakes to taste. Add two cans of coconut milk, the juice of 2 limes about 2 TBSP of cilantro. Salt to taste. Add in a bag of frozen cut green beans let this all sit for about 30 minutes. While it's sitting, boil up some penne or bowtie macaroni and serve the chicken over that. This is my all time favorite meal!
