http://www.skinnytaste.com/ Easy recipes. Some are more complex, but for the most part they're quick & easy.

Some of the dinners I make on WW:
Chicken fajitas (I just use the El Paso seasoning) on whole wheat tortillas- very low in points
Whole wheat pasta with shrimp and red sauce
Stuffed peppers (good way to get in protein, veggies and whole grains- just use brown rice and lean ground beef or turkey)
Veggie burgers and sweet potatos

omelets are quick and easy, just measure what goes into them like cheese or potatoes, etc. I make egg white omelets to make them lower points.
Quesadillas are quick and easy- buy some tortillas that are low in points (I forget which ones I have), I buy pre-grilled chicken from Trader Joes, pre-shredded cheese and some spinach and black beans. Toss it all in the skillet on top of a quesadilla and top it with another one and voila, dinner!
I do lots of salads for dinner if I need a quick meal.
Whole wheat pasta with broccoli, while that's cooking (I put in the pasta, then when it's almost done, I toss in the frozen broccoli)- I mix some fat free chicken broth with sauteed garlic and lemon juice and a little oil and use as a "sauce" It's delish and takes about 20 minutes. The pasta cooking is the longest part.
Homemade whole wheat pizzas are quick and easy. I buy the dough in the supermarket and jarred sauce and pre-shredded WW cheese. Or you can get fancy and put veggies on, etc.
