Spin off: what sides do you make for dinner?
I'm always making Mac and cheese, French fries and rice. It's so boring. What do you make? Also how do you get your kids to eat veggies?

Spin off: what sides do you make for dinner?
My DD LOVES quinoa. Her favorite is when I make it with roasted corn. She'll eat 3 bowls of it.
She also likes homemade fried rice, ST zucchini tots (though they're a PITA to make), mashed cauliflower, burnt broccoli, steamed baby carrots.

My kids love all different types/colors of beans so I make that a lot. They like couscous or quinoa as something different from rice or pasta. They also really like spinach salad (sometimes with tuna) and a raspberry vinaigrette dressing.. I put other veggies into it too.

My kids are pretty good veggie eaters.
Green beans. Steamed or with a little butter/garlic Raw tomatoes (cut), carrots, cucumber, peppers Corn Peas Sweet potatoes Rice, quinoa, farroh, or other whole grain. I just call it all rice Cooked honey carrots Steamed broccoli Salad with ranch Veggie mix (frozen section) Baked beans Roasted chickpeas Mashed cauliflower (they call it snow) Roasted asparagus Guac or cut up avocado Pickles Hawaii rolls, pita bread, potato bread, any bread really Applesauce (with pork chops) Trader Joe’s mixes like melodious blend
I make a batch or take leftover brown rice and freeze it. Then I always have something easy.
I usually prep veggies and a big salad on sundays. They love to “help” and sit there snacking on the raw veggies.
If I think they didn’t have enough veggies, sometimes we have a fruit picnic for dessert on a blanket in the living room. They are obsessed with basically all fruits.

I don’t usually make a rrrice/pasta at dinner bc the eat carbs all day long. I’ll do a protein and veggie, sometimes with a potato. Steamed broccoli Steamed green beans Raw carrots Raw cucumbers Grape tomatoes Roasted sweet potato chunks Roasted cauliflower French fries They’re pretty good with veggies. My older one is great, she’ll clean her plate of veggies which earns dessert. My little one forces them down as not to be left out!

My kids are a pita and won't really eat the same things. I already make them a separate dinner most days so I might as well make them their own sides lol.
One or both of them will eat: Fruit Rice, very occasionally Steamed green beans (I do a lot of the green giant green beans with almonds bc it's easy and we all like it) Roasted or steamed broccoli Corn Peas Mashed potatoes Plain spinach Baby carrots Red peppers Cucumbers
Dd1 eats mac n cheese for lunch at school every day. I keep pureed butternut squash in the freezer and add a cube to that to sneak a little veg in. She also eats a go go squeeze applesauce with veggies at snack every day.

Any veggies. We don’t do a carb as a side most times. If we do it’s rice. My ds is not a fan of French fries. No clue how to get kids to eat veggies cause I have that rare kid that loves them. But I’d try and hide them in other things if I had to

Pasta - He prefers pastas that he can put on his finger (lol - gross I know, but he's 3) like ziti, penne, rigatoni Vegetables: green beans, broccoli, cherry tomatoes, corn Fruits: Strawberries, grapes, cantaloupe, watermelon, bananas, apples Croutons
He will not really eat rice, quinoa, or potatoes of any kind on a regular basis. He will eat French fries if we go out to dinner (which is a rare occurrence in our house - only a few times a year).

We do a lot of rice/french fries, too. But in addition, instant mashed potatoes (ain't nobody got time for making mashed from scratch), roasted potatoes, any kind of pasta/noodles. Sometimes we'll do texas toast or breadsticks. And then veggies- mixed veggies, corn (not on the cob), broccoli with cheese, etc.
ETA: I agree with a PP about sneaking veggies in- DD isn't crazy about veggies, though we've convinced her cooked carrots are veggie straws (the chips) so she eats them and corn. But we usually cut up broccoli very small and mix it in with her pasta/meat.

Mine do the basics... Mashed potato, sweet potato, french fries in the oven (sometimes mashed potato bites or tater tots), pasta with sauce, meatballs, steamed veggies (broccoli, cauliflower, carrots, green beans, peas, corn). Sometimes mac and cheese. Never really a fan of rice.

Re the hiding the veggies in the food, mine figures it out. I made Mac n cheese with puréed carrots, pumpkin and butternut squash. That sh!t took forever and she took one bite and said “ew. Roni taste funny” and that was that. I couldn’t even taste the damn vegetables but she clearly has a more refined palate.

I know it sounds gross but i let my DS put ketchup on anything he wants. If he wants ketchup to dip all his veggies into fine. I let him pour the ketchup out, which helps too. He is picky but loves control.

I make a tray of a variety of roasted veggies in bulk for the week, plus then some rice or Mac and cheese I do carrots, potatoes, asparagus, green beans, squash, broccoli, cauliflower, peppers. Whatever is on sale!

in terms of a lot of work, I make one or two butternut squash every few months. Takes a few minutes to prep and then I roast it in the oven. Puree and then put in ice cube trays to freeze and then throw in a Ziploc. Then when I'm cooking the pasta I just throw a cube or two in the microwave. So it's not a lot, just an ounce or two of veggie but its better than nothing. I have to be careful not to add too much bc they'll start to notice it doesn't taste right. I also add it to pancake mix and they don't notice at all. If my kids ate meatloaf, sauce, etc I'd throw it in those too but they don't.

Honestly, I just let her have a multivitamin and hope she gets all her nutritional needs from that. It's not worth the fight or the effort.
How much of your daily allowance of vits and minerals is really in the few ounces of pureed veges that they are getting, you know?
I always felt veges were overrated though. I rarely eat one and I'm healthy as a horse!

Broccoli (boiled) Cauliflower (boiled) Corn (boiled) Asparagus roasted Sautéed spinach Sautéed kale Roasted potatoes Roasted butternut squash Roasted carrots Haricot verts (crunchier than green beans) sautéed Summer we grill zucchini and eggplants And salads
We just make that and a protein. Without bread or rice as a choice (they get a LOT of that when we eat out or for school lunch), they will eat veggies. They have to try things and usually they like stuff.

This thread is so depressing to me. As babies, my boys ate anything and everything and over time, they have become so resistant to veggies. I'm so jealous your kids will eat all of that. I have tried hiding...no dice. I have made the cauliflower tots, mashed cauliflower, riced broccoli, etc and they will not eat it. My middle guy won't even try it. He sees it coming out of the oven and he's announcing "I don't like it!"

DD is the same way. Only eats broccoli if it's in Chinese food- Chicken and broccoli. Will eat peas or green beans from the can, but that's it and doesn't like that very often either. I can't blame her because most of the stuff you listed makes me want to gag- riced anything (other than rice) is just gross to me and cauliflower is just so smelly. So I get it. LOL

I have my go-to sides that are healthy and I know my DS will eat. Usually that’s cut up tomatoes or cucumbers, or carrots. Sometimes all 3 and we call it a salad. He enjoys helping me prep them by washing them which I think motivates him to eat them.
I also default to frozen vegetables... bags of peas and carrots, or broccoli.
Just some of my lazy staples. He also loves corn. Bonus if it’s on the cob.

My list looks deceiving long but in reality most of that is what my 3yo eats and half of what she eats she'll only eat once in every 5 times I serve it.
My 5yo will eat plain baby spinach, green beans, and corn. I had to make a new rule that she isn't allowed to announce or ask about what she won't eat at dinner. I was so tired of the first thing we hear at dinner being whether or not she has to eat xyz. I swear if it weren't for her my 3yo would probably eat anything. It really is frustrating.

Every Damn night in my house is steamed broccoli! I’m so sick of broccoli but my daughter LOVES it. Other things are couscous, egg noodles, cucumbers and dressing, veggies (green beans, spinach, carrots, peas) sometimes fruit like strawberries or grapes cut up.

As the pickiest of all eaters, they'll be fine. I still don't like veggies, and don't eat them as often as they should. But I'm surprisingly healthy. ::knock on wood::
