This thread is so depressing to me. As babies, my boys ate anything and everything and over time, they have become so resistant to veggies. I'm so jealous your kids will eat all of that. I have tried hiding...no dice. I have made the cauliflower tots, mashed cauliflower, riced broccoli, etc and they will not eat it. My middle guy won't even try it. He sees it coming out of the oven and he's announcing "I don't like it!"
As the pickiest of all eaters, they'll be fine. I still don't like veggies, and don't eat them as often as they should. But I'm surprisingly healthy. ::knock on wood::
Same here. I'd much rather pop a vitamin or supplement than choke down veges. And I lived all this time very healthily. Go figure.

#1 likes broccoli, brussel sprouts, peppers, fruits, corn, Caesar salad, cucumbers, tomatoes, baked potatoes, pickles, hard boiled eggs, pepperoni, meatballs, rice...
#2 likes broccoli, carrots, rice, couscous, corn on the cob, baked potato, Caesar salad, tomatoes, fruits, applesauce, hard boiled eggs, pepperoni, avocado, meatballs, pickles...
#3 likes nothing. He eats rice, fruits, applesauce, avocado, cheese, pickles, cut up deli meat and i think that's it.
**#1 was sort of picky when he was younger and as he got older, he eats more and more. He eats a ton including loving all types of seafood. He only started liking broccoli and brussel sprouts this year. (he's 9)
**#2 always liked veggies. He is my non junk food eater. He prefers fruits and veggies over anything. Clearly not my child (he's 6)

Re: Spin off: what sides do you make for dinner?
I always make 2 sides (a vegetable and a starch). The veggies DS won't eat (like spinach, kale, etc) I use a chopper to make it tiny and then mix it into meatloaf, chili, meatballs or cheeseburgers. DH is the worst eater and he doesn't even notice that I do it.
I find that letting DS help me cook makes him more likely to eat the food he helped make. He's still a toddler so he's only allowed to sprinkle the salt/pepper, pour a little olive oil, or stir cold ingredients. Sometimes he only tries a little bit, but since we don't eat anything processed anymore, I feel like the little bit he does eat is more nutritious.

I wish my kids would eat this many veggies. DD is a bit easier and actually gets excited when she sees broccoli and carrots cooking, even string beans and celery.
DS will not do anything green. He just gags when he puts it near his lips The only vegetable he will eat is cooked carrots and corn - which is the iceberg lettuce of the vegetable bunch.

Yep. Our kids love to cook too. They all will give a hearty try to anything they prepare... or grow. They do gardening in school and that has helped with them eating lots of things (radish, carrots, basil, scallion). In the summer, we try to go vegetable picking at least once a month. Kids do love it and that’s how we all got into kale... who would think? Was also before it got popular. We look up how to cook anything in season.
