Steak - they just tell the kid its red chicken - the kid likes chicken
Its a big mind game (aka - calling brocolli - trees.)

Sat: Grilled Chicken Caesar Salad
Sun: Eggplant/Zucchini Lasagna with Turkey Meatballs and Garlic Bread
Mon: Spent the day in the city and had pizza
Tues: Baked ziti with turkey meat sauce
Wed: Steak Fahitas with yellow rice and black beans
Thurs: Sushi for me & DH, Pizza for the boys
Fri: Luleh Kebob (Armenian Hamburgers/no bun) and Pilaf
ets: realized we had a lot of red meat this week. Doing a few chicken/turkey dishes next week for sure

How do you do the zucchini parm? Saute it? Fry it?
I fried it this time and the kid ate it like it was his new job.
I think I may try sauteeing it though next time. or at least poaching it in garlic and white wine, then baking it with maybe toasted breadcrumbs sprinkled between the tomato and cheese layer.

Sunday: Dijon lime chicken
Monday: Asian turkey meatballs with brown rice and broccoli
Tuesday: Middle Eastern Prawns with couscous
Wednesday: Tandoori chicken with brown rice and cauliflower
Thursday: Greek style shrimp with cannellini beans with couscous
Friday- Italian turkey meatballs on whole grain rolls or with whole wheat pasta.
Saturday or Sunday (might go out to eat)- Czech style roast duck with pickled red cabbage.
Saturday or Sunday: Baked Shrimp Parm heros.

Of course! I just fm'd it to someone so I'll c&p from taht!
I usually take some garlic cloves and throw them in my mini prep with a good amount of dijon. I figure maybe 10 garlic and .5 cups of dijon. Sometimes I throw a dash of white vinegar for extra zing. Add some kosher salt, coarse pepper and a little fresh thyme or rosemary. Pulse to a thick paste. Cut slits in the loin and push the paste into the cuts. Spread the rest of the paste over the loin and then you roast it. I usually start it at a super high temp and then reduce it to a 325 after 15-20 minutes for the rest of the cooking.
