what is your signature dish?
What dish does your DH or other family member request you make every time?
What dish do you rock??!!
I must say that I love the way my tiramisu comes out.
ETA: It could be any time of meal- I don't discriminate!

Re: what is your signature dish?
Linguini with clams gets requested by my parents all the time. I have to say, I actually prefer my recipe over most restaurants.
Also my penne a la vodka is quite good.

Re: what is your signature dish?
DH loves my chicken scampi and meatloaf.
eta: Chicken Scampi
Chicken Scampi
• 1/2 cup butter • 1/4 cup olive oil • 1 teaspoon dried parsley • 1 teaspoon dried basil • 1/4 teaspoon dried oregano • 3/4 teaspoon salt • 4 cloves garlic, minced • 1 tablespoon lemon juice • 4 boneless chicken breast halves, sliced lengthwise into thirds
In a skillet heat the butter or margarine and oil over medium high until the butter/margarine melts. Add the parsley, basil, oregano, salt and garlic and mix together in the skillet. Stir in lemon juice. Then add the chicken and saute for about 3 minutes or until white. Lower the heat and cook for about 10 to 15 minutes or until chicken is cooked through and the juices run clear. More butter/margarine can be added if needed.
*Notes: I coat the chicken in seasoned flour first (mix together flour, ½ - 1 tsp oregano, parmesan cheese). To make it even easier, I get all the dry ingredients together in a pinch bowl first – the parsley, basil, oregano, and salt. That way I can just throw it in the pan once the butter’s melted. I like garlic and don’t actually mince the cloves myself so I usually toss in a tbsp of chopped jar garlic. You can also use white wine instead of lemon juice.

Re: what is your signature dish?
I make homemade potato chips that everyone requests. I also make really good bread.
Oddly enough the things that other people ask for are not my favorite things to cook.

Re: what is your signature dish?
Best French Onion Soup
5 tbs unsalted butter 1 tsp salt 2 large red onions, thinly sliced 2 large sweet onions, thinly sliced 1 48oz can chicken broth (I use College Inn) 1 14oz can beef broth (I use College Inn) 1/2 c red wine (I like Bogle Merlot) 1 tbs Worcestershire sauce 2 sprigs fresh parley 1 sprig thyme leaves 1 bay leaf 1 tbs balsamic vinegar Salt and fresh ground pepper to taste 4 thick slices of French bread Gruyere cheese Asiago or mozzarella cheese
1) Melt butter over med high heat. Stir in salt and onions. Cook about 35-40 min, stirring frequently, until carmelized and almost syrupy.
2) Add red wine. Then add chicken and beef broth and Worcestershire sauce. Bundle the herbs and place in pot. Simmer over medium heat for 20 min, stirring occasionally. Remove and discard the herbs. Add in vinegar and salt and pepper. Cover and keep over low heat while you prepare the bread and cheese.
3) Preheat broiler. Arrange bread on a pan and broil until toasted on each side. Arrange 4 crocks on a baking sheet. Place a slice of bread in each crock, fill with soup, and top with lots of Gruyere and either Asiago or mozzarella. Sprinkle with a little grated cheese and parsley.
4) Broil about 5 min or until bubbly and golden brown. Serve immediately. Enjoy!!!
***Leftover soup, if there is any , freezes very well.***
ETA - I use Vidalia and red onions and add in a little fresh ground pepper as they cook down. You can add a little extra butter too if needed. I also throw in an extra splash of wine or broth sometimes. I just taste as I go along and adjust as needed.

If there is one dish I could do better, it would be lasagna. Can you tell me how you make yours? Thanks!
