Stuffed Poblano Peppers I got the recipe from the internet, but added my own spin
I posted on LIF a couple of years ago, but I've since modified the recipe.
this is the link to the blog I got the recipe from.
Stuffed Poblano Peppers
6 medium/large sized poblano peppers Extra virgin olive oil 1 shallot or 1/2 diced onion 2 cloves garlic, minced 4-5 links sweet italian sausage, depending on size 1 cup salsa 2 tsp. ground cumin 5-6 oz goat cheese, crumbled Salt and pepper 1/2 cup shredded mexican-style cheese
1. Preheat the oven to 400.
2. Heat a drizzle of olive oil over medium heat, and saute the shallot until tender. Add the garlic, and cook for an additional minute. Crumble in the sausage, and cook until the sausage starts to brown. Add the salsa and cumin. Season with salt and pepper, and simmer over low for a few minutes. Turn off the heat, add the goat cheese and stir.
3. Cut just the tops off the peppers, and then cut a slit down one side. Pry the slit apart, and remove all of the ribs and seeds.
4. Stuff the sausage mixture into the peppers. Top each pepper with some of the shredded cheese.
5. Bake until the poblano is tender and browned around the edges (25-30 minutes in my oven).
I usually serve this with spanish style rice and jalapeno cheddar corn bread.
I also make Cheese Fry Chicken, which is an idea I got from a friend and is a HUGE hit.
1 lb. chicken breasts 2 lbs baby red or yukon gold potatoes 2 cups shredded jack cheddar cheese 6 scallions, chopped ½ cup bacon bits 1/2 to 3/4 bottle of ranch dressing Grill seasoning(I like McCormick's) Olive oil, salt and pepper Cut the potatoes into bite-sized pieces (about 1 inch), toss with a little olive oil and grill seasoning. Roast on a baking sheet at 400 degrees for about 30-40 minutes until fork-tender and crispy (turn the broiler on high at the end for 3 minutes if they aren't as crispy and brown as you would like).
When the potatoes have about 10 minutes left to cook, cut the chicken into one inch pieces and saute them over medium heat with a little oil, salt and pepper until no longer pink, about 10 minutes total. Combine chicken in a large bowl with potatoes, ranch dressing, about 1 cup of the shredded cheese, the scallions, and the bacon bits. Serve with extra cheese and bacon on top.

I guess I make everything like CRAP because I never get special requests!!
Actually, I'm really not much of a cook... but I've perfected my baked ziti over the years. It's not consistent though. Sometimes it def comes out better than others. I'm also really good at making fish. Umm, that's about all I know how to make!
ETA! Ohhh I just thought of something!! I once tried making meatballs for my dh and it was an EPIC FAIL!! I called my grandmother nearly in tears over the stove because my meatballs completely came apart and I thought the meal was ruined!! She told me to just turn it into a meat sauce... and that's actually my dh's most requested meal these days I can't believe I forgot!!
