Re: sweet potato fries
4 sweet potatoes, cut into large French fries 1 tablespoon water 2 teaspoons Italian seasoning 1/2 teaspoon lemon pepper 1 pinch salt and pepper to taste 2 tablespoons olive oil
DIRECTIONS Preheat the oven to 400 degrees F (200 degrees C). Place the cut sweet potatoes into a microwave-safe dish with the water. Cook on in the microwave for 2 minutes on full power. Drain off liquid, and toss with Italian seasoning, lemon pepper, salt, pepper, and olive oil. Arrange fries on a baking sheet in a single layer. Bake for 40 minutes, turning once, or until fries are crispy on the outside.

Cut sweet potato into fry strips, toss in some olive oil. Spread evenly on a baking sheet. Put in a preheated oven at 425 and cook until they are done about 30-40 minutes.

Re: sweet potato fries
I LOVE sweet potato fries.
I cut the potato into skinny fries. Place them in a pan & then sprinkle some cinnamon sugar on them & place in the oven for 30 min on 375 degrees (Flipping the fries over in 15 min) Once they are cooked, I let them sit for a couple of min & then I sprinkle a little more cinnamon sugar & mix fries all together & serve.

probably a silly question but cinnamon sugar is that cinnamon and sugar or is that something else?
BTW all these sound so yummy, I'm gonna have to try each recipie over the next few wks

Thanks, I'm gonna go to the store tonight to pick this up along with sweet potatos. But another question do you dip your potato fires into anything? Like is there any special sauce to buy to dip in after they're cooked?

Re: sweet potato fries
Here are some dip recipes for Sweet Potato fries. I personally love them seasoned with cayenne and then dipped in blue cheese dressing . . .

Re: sweet potato fries
You can mix mayo and maple syrup or honey. There is a restaurant in Sayville that uses that as a dip. Personally, I like them without dip. Here is my fave fry recipe, sooooo good, but savory not sweet.
sweet potatoes, one per person olive oil (see below)
Seasoning Mix: 2 T ground coriander 1 T ground fennel 1 T dried oregano 1 T Aleppo Pepper (or use a smaller amount of cayenne pepper) 2 T kosher salt
Preheat oven to 425 F. Peel sweet potatoes and cut into strips about 3 inches long and 3/4 inches thick.
In mortar and pestle or spice grinder, grind together coriander, fennel, oregano, and Aleppo pepper. Mix in salt. (This makes enough for several batches of sweet potatoes, so you'll need a small jar to store the extra.)
In plastic bowl, toss together cut sweet potatoes, olive oil, and spice mixture. You will need about 1 T olive oil and 2 tsp. of the spice mixture for every two sweet potatoes, depending on how spicy you like it.
Spray flat roasting pan with non-stick spray. (I would use a non-stick cookie sheet if I had one small enough to fit into my toaster oven!) Spread out sweet potatoes in single layer. Roast 30-40 minutes, turning about every ten minutes. Sweet potatoes should be softened through and lightly browned when they're done. (They will only be slightly crisp. If you wanted them crisper I might increase the temperature to 450 F or use convection if you have it, but sweet potatoes never get as crisp as fried potatoes.) Serve hot.

I do something similar. I just cook the potato in the microwave first for a few minutes so that they are ready in like 15 minutes in the toaster oven. Little olive oil, little sea salt. YUM
