Quick & healthy breakfast ideas
What are your favorite breakfasts that are very quick to make but still healthy?
Eating breakfast at work isn't really an option, and I don't really to eat anything that has a ton of sodium (like the prepackaged breakfasts).

Here's a recent favorite and SO simple...
Overnight Refrigerator Oatmeal 1/4 oats 1/2 c vanilla soy milk (or skim milk or almond milk or whatever...) 2 tbsp dried cranberries 1 tbsp shredded coconut 1 tbsp crushed walnuts Combine all ingredients in a small container with a lid and refrigerate overnight (or at least several hours) and voila! Breakfast! You could even mix in fresh fruit in the morning or stir in syrup or peanut butter...

I have been eating a chobani yogurt every morning. You can make egg mini muffins on the weekend and then heat it up for the week. There are a ton of recipes on pinterest.

Protein shake with Almond milk and some berries and quinoa!
Or I make a pancake the night before and just nuke it or eat it cold the next day!
2 tbs coconut flour 2 egg whites 3 tbs almond milk Stevia to taste. Mix it up and cook as you would a regular pancake!

I eat a cup of Greek Yogurt with a cup of berries (usually blueberry and strawberry) and some some granola.
I usually measure everything out the night before so in the morning I can just grab and go.

I often make an egg in the microwave -- I just spray a small bowl or even a mug with nonstick spray, crack an egg into it, cover with plastic wrap, and microwave at 20 second intervals until done (usually takes 3 20 second intervals).
Sometimes I just poke the yolk with a fork (so it doesn't explode) and microwave it intact, and then put it on a whole grain english muffin. Other times I will scramble it with a little water or skim milk, and add some low-fat cheese (feta, shredded cheddar, whatever) and have it like an egg scramble/omelet. Or you could put it in a tortilla/wrap.
I always have lots of fruit on hand to have with my breakfast.
Yogurt, instant oatmeal (plain is best to avoid added sugars, and then add fruit, cinnamon, etc.), or whole grain cereal (e.g., Cheerios) with fat free milk or almond milk are good options.
Also, I sometmes make a batch of a healthy muffin recipe and freeze it.
Frozen whole grain waffles with peanut butter or low-fat cream cheese and fruit.
I also sometimes make a vegetable quiche and freeze individual pieces to quickly defrost in the morning. It's a good way to use up odds and ends in the fridge.

1/2 cup eggwhites Peppers & onions (Frozen ones from Trader Joes) Some mozzarella 2 tablespoons salsa
Use cooking spray and coat the pan. Cook peppers and onions until almost carmelized.
Set aside.
Pour eggwhites in that same pan.
When eggs are almost cooked, add the toppings.
Fold over and flip a couple of times and voila! Got yourself a protein packed healthy breakfast.

I also do the protein shake with almond milk and the Trader Joes frozen berries. Throw it in the Magic Bullet and you got yourself a lovely shake.

Add some almond milk and you have one of my FAVORITE meals! (with some sort of protein on the side!lol)

I just ate the skinnytaste version of this recipe, and it is so good and filling!
