South Beach Diet Thread!!!
The south beach diet is the only diet that i have had incredible success with. In 2 weeks I loose about 8 pounds. I did it twice for my wedding and lost 20 lbs. I need to loose another 8, so here we go..... I am going to need some will power for the first few days....Anyone else on the South Beach diet?

lol, i have a confession to make.. I was supposed to start when i wrote that post but I was offered a new job and was so excited and went out to celebrate and poof.. out went the diet....lol
i am starting again may 1. and wil def. keep up with it.

I'm on it! I lost 30 lbs 4 years ago (and kept it off all this tme) and now I'm trying to lose the last 25 lbs. Like you, South Beach was the only diet that worked for me. WW points was great for maintaining my weight, but not for actually losing.

ah ok day 1 gone and now day 2, so far so good no cheating, now I just have to exercise too and pull out my south beach cookbook for recipes and ideas, otherwise I wont stick to it. anyone have any good ideas for breakfast?
I started back on Phase 1 yesterday too. So far, no cheating although I did have one of those carb & sugar control Dannon Light & Fit strawberries & creme yogurts for breakfast. It has a minimal amount of fruit but I figured it was better than nothing! I'm kind of sick of eggs - hard boiled, scrambled, omlette - there's only so much you can do to an egg.

I started today too!!! So far so good, eye whites this mroming and a tbs of peanutbutter, lunch I had turkey, cheese, salad wraps ( wrapped the low fat cheese and turkey in the lettuce).
Can we have the slimfast drinks on this diet?

I just had turkey and cheese wraps too! Hopefully they will keep me full for awhile.
I think the Slimfast drinks might have too many carbs/sugar for Phase 1. The Atkins Advantage chocolate shakes aren't bad carb wise but they aren't the tastiest things in the world.

Sounds like a great idea! Here's what I had:
Breakfast - Dannon Light & Fit Sugar & Carb Control Yogurt
Mid-morning Snack - 1 hard boiled egg with Grey Poupon (yes, I know that's a random snack )
Lunch - Roll-ups: 4 slices light turkey and 2 slices of Provolone (full-fat but actually LESS fat than reduced fat Swiss )
Mid-afternoon Snack - Sugar-free/fat-free Jello Chocolate Pudding cup
Dinner - Low Carb Eggplant Rollatine (I have recipe if anyone wants it) and sauteed spinach
"Dessert" - Low Carb/Low Sugar International Coffee Vanilla Creme
Drinks - Cherry Coke Zero, Sugar free Red Bull, Lipton Spiced Chai tea.
I'm working on drinking more water. I have a 1 liter bottle of Poland Spring that I'm going to try to get through today!

I'm actually down 1.3 lbs from yesterday I know it's water weight, but progress is progress
ETA: Is there a verdict on whether Slim Jims are okay to eat as a snack? They're very tasty.

I don't think we're supposed to have the South Beach bars in Phase I ........but I can NOT eat (especially something as heavy as eggs) before getting on the train into NYC in the morning.......... -
Do you think eating a bar for breakfast would TOTALLY ruin the diet ??

I know what you mean! I think the best breakfast bar is probably the peanut butter one because it has the most protein (and it's really tasty too). I looked at the nutritional label and it seems like it would only have 2 net carbs, which doesn't seem that bad. I think I did the carb math right - deducting fiber and protein from total carb count?
Carbs: 15g (7g sugar) Fiber: 3g Protein: 10g _________ Net carb = 2g
The Atkins Advantage Breakfast Bars might be slightly better in terms of sugar/carbs, but they taste like cardboard IMO.

Breakfast: one egg and cheese omlette
No snack
Lunch: Salad with mozzarella cheese
Snack: 1 ounce peanuts

Good idea! I just wanted to add another ricotta recipe that I've tried - PUMPKIN ricotta. It tastes almost like pumpkin pie filling.
You just use the part skim ricotta (I like Polly-O), a packet of Splenda, and then vanilla extract, cinnamon, dried ginger and nutmeg in whatever portions you like.
I've found that it tastes more dessert-y when I put in the food processor for a minute to make it nice and creamy.

You are right -- you are not supposed to have the bars in the first phase. The last time I did it I had the bars for bkfst sometimes in the first two weeks. I leave early and dont' always have time to make eggs and I wasn't a fan of those spinach quiche things. I still saw great results. Now - might they have been better if I hadn't had them?? - who knows?? but, it worked okay for me.

I just had a great dinner a piece if steak (or should I say a CHUNK of steak) and Southbeach-safe mashed potatoes (it is actually cauliflower, with a bit of low fat sour creme, 1% milk, salt and pepper, steam the cauliflower and then puree all the ingredients, it was like sweet mashed potatoes!!!! Delicious, I feel like I had carbs and I didn't

I made some modifications to it though. I didn't use the yogurt or breadcrumbs - just heated the eggplant in a frying pan with a little bit of olive oil.
I wasn't crazy about the sauce the first time I made this - it was a little spicy and bitter (because of the red wine) for my taste, so I just used the crushed tomatoes and Italian seasonings the second time around (no wine reduction, red pepper flakes or fennel). DH really liked the original sauce though, so it's all a personal preference.
