I made this and it was very tasty, however I used part skim ricotta instead

Chicken Capri -
1 cup reduced fat ricotta
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 boneless, skinless chicken breast halves
1/2 teaspoon garlic powder
2 tablespoons extra virgin olive oil
1 cup crushed tomatoes
4 slices reduced fat mozzarella cheese

In blender or food processor, combine the ricotta with the oregano, salt, and pepper. Process to blend.

Rub the chicken with the garlic powder. Heat the oil in a large skillet over medium high heat. Add the chicken and cook for 12 minutes per side. Place the chicken breasts, side by side, in a large baking dish and allow to cool.

Preheat the oven to 350 degrees.

Spoon 1/4 cup of the cheese mixture and 1/4 cup tomatoes onto each chicken breast. Top each breast with 1 slice mozzarella. Bake for 20 minutes or until a thermometer inserted in the thickest portion of the breast registers 170 degrees and the juices run clear.
Makes 4 servings.

omg!!! I made the taco meatballs this afternoon and they are incredible... the cheddar cheese in the middle really makes a meatball.. who knew...lol

I also tried to make the french toast crepes this morning, they tasted amazing but i could not get the darn things to stay together while trying to flip.. oh well...

another day on south beach.... now on to day 10 :)

haha.. here it is, but I must say I didn't enjoy it as much as I thought, but here is is, try it:



2 cups ricotta cheese
3 packets splenda
1 tsp vanilla
2 eggs

mix well, pour into 4 ramekins, bake in oven for 20 minutes

It hasn't been a good weekend. I forgot about eating yesterday because I was at work, so my dinner my eggplant rollatine (not the low-carb version) and a slice of cake Chat Icon

AND I had a bagel this morning for breakfast Chat Icon That week on regular WW has messed up my carb cravings (I switched over to Core, which is more like SB). I need to start anew tomorrow. I have a wedding tonight, so I'm sure there will be some more cake in my future Chat Icon

ETA: I find myself very amused by the synchronized blush icons.

I just keep repeating my mantra to myself:" nothing tastes as good as skinny feels".... it seems to help me overcome my desire to eat bad.

I plan on staying on phase another 2 weeks because i am doing so well, we will see how that works out. 10 more pounds to go :)

Good luck starting again tomorrow...after a few days the cravings are decreased alot!!!

Thanks! I was such a carb queen in the old days (seriously, I asked DH to buy me a bread machine for my birthday back then) and I really don't want to go back to that, so it's time to get back on track.

I feel like such an idiot for eating so poorly, especially since I went dress shopping yesterday and fit into a dress 2 sizes smaller than my last shopping trip a few months ago. I definitely don't want to lose that feeling just so I can have carbs and bad fat.

Good luck at the wedding tonight!! At least I know I can't overdo it on the champagne since I have more work to do when I get home Chat Icon

I totally cheat on the weekends, too many parties!!!! I *try* to eat well but def have drinks and sweets on weekends. so far so good, havent gained anything. I noticed though that during the week when I am super strict I am not hungry but on the weekends I am starving!!! I guess thats b/c I sneak in carbs on the weekendsChat Icon

So funny you mention this because I too find this to be true. Oh well!!! I am happy to report that after a stall in weight loss for one week, on Saturday I lost 3 more pounds (oh and I'm pmsing big time) I really think this has to be my lifetime way of eating (despite the cheating). This plan is very similar to what my nutritionist recomends.

lol... Def. try them, very yummy..

I am eating the Vegatable cheese puff casarole that I just took out of the oven.. sooo yummy, very cheesy but its really yummy :)

I am on day 15, I am staying on phase 1 for another 2 weeks, I am doing soo well and I want to loose a few more lbs :)

In place of nuts, may use:

Some Sugar Free Products may be made with sugar alcohols (isomalt, lactitol, mannitol, sorbitol or xylitol) and are permitted on the SBD. They may have associated side effects of GI distress (abdominal pain, diarrhea & gas) if consumed in excessive amounts.

1/2 cup of plain fat-free yogurt (once per day max.)
Fat Free 1/2 & 1/2, Nonfat milk, 1% milk, Soy milk allowed with coffee. Otherwise avoid all other dairy products (unless listed under protein choices or sweet treats). Limit to < 2 TBS per cup of coffee. Otherwise, avoid all milk products in Phase 1, including:
Yogurt, cup-style and frozen
Ice cream
Milk, low-fat, fat-free, whole
Milk, soy

MISCELLANEOUS
Alcohol of any kind, including beer and wine
No regular ketchup or cocktail sauce
No pork rinds - too high in saturated fat
No jerky - too high in sugar content
Limit Caffeine-Containing Beverages to 1-2 servings per day

So.. how is everyone doing? I am in the 3rd week and down 7 pounds so far, a little slower this time around.

I messed up totally the other day and drank a regular pepsi because i thought it was diet..i was sooooo mad, but i am back on track :)

I am starting up south beach phase 1 again today, I tried weight watchers for a month but I loose weight quicker while on south beach so here we go again :)

I have a vacation to Ocean City, Maryland in 2 weeks so I need to loose a few more lbs :)

I am doing ok, overall I have lost 13 lbs, and was doing well on Phase 2. I decided to start phase 1 again today since we are leaving for a cruise on the 29th
