Food for Thursday:
Breakfast - 2 slices of light chicken breast and 1 slice of provolone
Lunch - it's free lunch day at my office, so I ate some kind of meat of an unspecified nature. I think it may have been beef. Was slightly "bad" and had the carrot puree as well but I did avoid the pastries and desserts.
Snack - 2 slices of light chicken breast and 1 slice of provolone.
Dinner - avocado stuffed with lobster salad with mixed greens.

Anyone start phase 2 or still on phase 1? I am still doing phase 1 but Im getting tired of it, anyone else notice they are always hungry? its like my metabolism sped up?
I started Phase 2 on Monday, but I think I might go back to Phase 1. I put on about 1.5 lbs since I started Phase 2.
The only carbs I added in were 1 small bag of Soy Crisps at lunch on Monday and Tuesday, I had whole wheat pasta for dinner on Monday and I had a glass of wine on Tuesday but just a salad for dinner. I think maybe it's too many carbs too soon?
I had fruit for breakfast this morning to see if I could have at least fruit and not put on weight. If the scale goes up tomorrow though, it's back to Phase 1!

I am trying to stay on phase 1 for a total of 4 weeks, I want to lose enough wieght and then I am going to really modify phase 2, just a few addiitons from the phase 2 "allowed list". I plan on keeping breakfast and dinner on a phase 1 regime but for lunch I will change it up a bit. I'm really nervous to make any changes since it is so nice to lose weight so effortlessly

I am just getting tired of eggs and egg whites. I have mastered all types of omeletes LOL.
I've had fruit for breakfast the past few days (I dropped the 1.5lbs I put back on, even with the fruit - so I'm back down 15lbs overall). I might try to go back to eggs tomorrow, but I'm so tired of eggs. And rollups too

Started again this morning. I am going shopping soon to purchase all my sb diet foods.
How is everyone doing on it? I am excited this time around. I would like to loose 20 lbs :)

I am on day 4. I weighed myself this morning and after completing 3 days on the diet I lost 2 lbs!!!!!!!!!! yay... I love this diet :)

yay.. I love talking to more south beach ladies :) Today is day 7 for me and I am already down 5 lbs, I feel wonderful and have found some yummy recipes so i do not feel deprived at all.

Here are some phase 1 recipes i have collected this week and wanted to share with you ladies :)
Taco Meatballs - South Beach Diet Recipe (Phase 1) Ingredients: 1 1/2 lb ground beef (lean) 1 package taco seasoning mix (Taco Bell, Ortega, etc.) 1 green onion, finley diced 2 eggs 1 clove garlic, minced [optional] 1 block sharp cheddar cheese, cut into small cubes Preheat the oven to 425°F. Beat eggs and mix all ingredients except the cheese together. Mold a Tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat. Place on edged cookie sheet (sprayed with PAM) and bake at 425°F for 7 - 10 minutes or until meat is done and cheese has melted. Serves 10-15 people. Less than 1 carb per meatball.
Beef and Bean Chili PHASE 1
2 (11/2-cup) Description Top this hearty chili with chopped scallions, reduced-fat sour cream, or grated low-fat cheddar cheese.
Prep time: 5 minutes Start to finish: 25minutes
Ingredients 1/2 tablespoon extra-virgin olive oil 1/2 pound lean ground beef 11/4 teaspoons chili powder, divided 1/2 teaspoon ground cumin 1/2 small onion, thinly sliced 1 garlic clove 1/2 (28-ounce) can diced tomatoes 1/2 (15-ounce) can kidney beans, rinsed and drained Salt and freshly ground black pepper
Six-Layer Taco Salad
Phase 1, 2, & 3 Prep Time: 20 min Total Time: 20 min Makes: 4 servings
1 lb. extra lean ground beef 1/2 tsp. each ground cumin, garlic salt, ground red pepper (cayenne) 1 bag (10 oz.) torn romaine lettuce (about 10 cups) 1/2 cup SOUTH BEACH DIET™ Ranch Dressing, divided 1 large tomato, chopped (about 1 cup) 1/2 cup KRAFT 2% Milk Shredded Reduced Fat Four Cheese Mexican Style Cheese 1/2 cup green onion slices
Sprinkle meat with seasonings; cook until browned, stirring occasionally. Drain.
Place lettuce on large serving platter. (Or, divide evenly among four salad plates.) Drizzle half of the dressing evenly over lettuce; cover with layers of meat and tomatoes. Top with the remaining dressing.
Sprinkle evenly with the cheese and onions.
Vegetable Cheese Puff Casserole
Phase: 1 Preheat Oven: 350F Cooking Time: 30-40 minutes
2 c frozen broccoli 2 c ricotta 2 eggs 1 c parmesan cheese 1 c shredded lite cheese garlic powder and onion powder to taste salt and pepper 2 T lite Alouette garlic and herb cream cheese spread
Mix all ingredients together and spread into an 8x8 Pyrex dish that has been sprayed with PAM, top with some more parmesan cheese, spray with some I Can't Believe It's Not Butter Spray and bake.
Cheesy Salsa Chicken Breasts Printable Version
Phase: 1 Preheat Oven: 350°F
4 boneless, skinless chicken breasts 1 small jar of Pace Chunky Salsa Fat-free (or low-fat) sharp cheddar cheese Green onions Low-fat sour cream
Phase One
Put 4 boneless, skinless chicken breasts into an 8 X 8 pan sprayed with Olive Oil Spray.
Pour one small jar of Pace Chunky Salsa (or any no-sugar-added thick salsa) over the chicken.
Bake in 350-degree oven for about 25 min. You can check before that time but my breasts were thick.
Remove the chicken dish & put fat-free (or low-fat) sharp cheddar cheese (or whatever variety you like) and some chopped green onions on top and return to oven until cheese is melted & bubbly.
Top with a dollop of low-fat sour cream when serving, if desired.
Surprise South Beach Diet Mashed Potatoes
Serves 2 Description Our Surprise South Beach Diet Mashed "Potatoes" are made from pureed cauliflower, so they taste like the real thing (as the name implies). Below is the original recipe, but feel free to get creative. Like potatoes, cauliflower is great for taking on flavors, so try vamping up this South Beach Diet staple and create a sensational holiday side dish with the addition of roasted garlic, horseradish, or a touch of chipotle peppers.
Ingredients 2 cups cauliflower florets 1/2 ounce butter-flavored spray 1/2 ounce fat-free half & half Pinch salt Pinch freshly ground black pepper
Instructions Steam or microwave the cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste. Season with salt and pepper.
South Beach Diet Chocolate Cookies
Phase 1
30 pecan halves, chopped fine 1 egg 1 teaspoon cinnamon ½ teaspoon vanilla 2 teaspoons cocoa powder 2 teaspoons sugar substitute cooking spray 6 servings.
Preheat oven to 350 degrees. Mix all ingredients. Drop by teaspoonful onto greased cookie sheet. Bake for 8 minutes or until firm to the touch.
Peanut Butter Cookie Recipe, Phase 1
1 cup Peanut Butter 1 cup Splenda 1 Egg Approx. 20 servings.
Coat baking sheet with cooking spray. Preheat over to 350. Combine peanut butter, splenda, and egg. Mix until combined. Toll dough into walnut size pieces and place 2 inches apart on cookie sheet. With a fork dipped in more splenda flatten cookies. Bake at 350 for 9-10 minutes. Only 2 cookies per day allowed
Mock French Toast, which came out more like crepes. They were really delicious. I doubled the recipe and modified it a bit, and it made 8 crepes.
1 c. part-skim ricotta 1 egg + 1/4 c. Egg Beaters (or use 2 eggs) 2 packets Splenda 2 tsp. vanilla cinnamon (to taste)
Blend everything in blender. Spray frying pan with cooking spray. Cook each crepe over medium to low heat (it takes awhile to cook--don't touch them until they look sort of dry on top). They are very delicate and are sometimes difficult to flip. The trick is not to be too hesitant -- they bend a bit when you're trying to slip the spatula underneath, but just keep pushing and then flip quickly! Some of mine ripped, and some I was able to flip in one piece. Either way, they were delicious and a great alternative to something like pancakes or french toast (definitely more crepe-like, though).
Mock Cinnabon:
1/2 C. cottage cheese 1 pkt. splenda tsp cinnamon few pecans
blend with fork 15 sec. in micro to take off chill
Belgian Waffles Phase 1!
Ingredients:
2 large eggs 1/4 C Lowfat Ricotta Cheese (store brand) 1 T Granular Splenda, more or less to taste 1/2 t. Baking Powder 1/4 t. Cinnamon, more or less to taste (optional) Dash Nutmeg, more or less to taste (optional)
Directions:
Preheat waffle iron. If no waffle iron is available, recipe can also be used for fluffy pancakes, but that is not as much fun! Beat eggs with electric mixer on high for 1 minute to make them light and fluffy. Add all other ingredients. Beat until smooth. Spray waffle maker with PAM or other cooking spray. Pour all batter, should fill bottom tray. Close and cook as usual for waffles.
Top with Smart Spread or other butter substitute, a sprinkle of splenda, and/or some sugar free syrup. Serve with V8 for a complete and satisfying breakfast!

Here are a few more ladies:
Crock Pot Stuffed Peppers
6 med. to lg. peppers 1 1/2 lb. ground chuck 1 med. onion 1 (16 oz.) can tomato sauce 1 (16 oz.) can whole tomatoes 1 (8 oz.) container sour cream or sour cream onion dip Minute (instant) rice (2 servings), make according to directions on box Here I would substitute cooked brown rice. Clean the inside of peppers and cut off tops. Mix ground chuck, onion, whole tomatoes drained squeezed into ground chuck, pepper, and seasonings of your choice and rice. Put ground chuck mixture into raw peppers, now place these peppers into your crock pot. Mix the can tomato sauce and sour cream together and pour this mixture over the stuffed peppers. Cover and cook on low for 7 to 9 hours, or on high 4 hours
South Beach Diet Recipes Vegetable Quiche Bars
This recipe is an adaptation from the Vegetable Quiche Cups in the SBD book. I wanted a quicker faster way to prepare them without using the foil cups.
Mix together:
1 lb package of chopped broccoli (defrosted) - or the equivalent of freshly steamed broccoli. 1/4 cup red bell pepper - chopped 1/4 cup onion - chopped 3/4 cup of egg substitue 3/4 cup of low-fat cheese - shredded
Pour mixture into a loaf pan that has been sprayed with olive oil. Bake at 350 degrees for approximately 30-35 minutes. Allow to cool. Slice into 8 bars or twelve squares.
Note: Each bar is the equivalent of 2 and one half the SBD diet quiche cups. The bars are a perfect fit for the snack size Ziplock baggies.

I'm still down the 15 lbs that I lost on SB but now I'm doing WW and not loving it all that much. SB was much simpler - no counting points
I wonder how many points the Belgian waffles are. They seem to frown upon cheese on WW...

First can I join too???? Second, I've been on South Beach for about a month now and am down 10 pounds (I'm exercising too).
I'm just curious, does anyone find that even if they slip up a day or two a week this diet still works beautifully. What's been happening is that with all the may/June weekend parties and events I've by no means been stellar over the week ends although I probably follow it to a T M-F, and I'm still losing weight and more importantly feeling great. I'm sure exercising is a part of it but I'm really just pleased with this way of eating. BTW I'm hoping to lose 50 more pounds and really don't care if it takes a year or more.
