Thousand Island on a roll
Chicken cutlet and then add on top
Diced Fresh Mozzerella

Add some frank's hot sauce and blue cheese on a bun.
Top homemade pizza and add hot sauce or bbq sauce.
Paninis or salads

Instead of chicken parm, you can top with ham and swiss cheese and melt for a chicken cordon bleu type dish.
You could make a lemon/wine sauce with lemon juice, butter, white wine, chicken stock ... sometimes I add mushrooms. Kind of a chicken francese. You can serve it as an entree or cut up the chicken and serve over pasta with the sauce.
Chicken cobb salad, chicken ceasar salad, etc. -- or wraps filled with the salads.
