Beef stew. It's super easy.
Cut beef in 1-1.5 inch cubes
Peel and cut potatoes in 1.5 inch pieces
baby carrots
onions
1 bay leave
salt, pepper, herbs
water half way or 3/4 to cover most of the ingredients

Re: Please share your favorite Crock Pot recipe

Another loin of pork recipe -
Salt and pepper the pork then cover it with apple juice and cook on low. When you are ready to eat drain almost all of the juice and add any bbq sauce you like. As you mix in the sauce pull the pork apart with two forks. It is delicious!!

We LOVE McCormick's Italian Herb Chicken.
Just add the season pack along with
2-1/2# chix
2 can stewed tomatoes
1 can tomato paste
1 can mushrooms (optional)

I make it over angel hair pasta...

I was given a cookbook - "Fix It and Forget It Lightly" - that has a lot of great recipes for low-fat crockpot cooking.

I've tried a few and they've all turned out great. I recommend it.

Re: Please share your favorite Crock Pot recipe

This is called Chicken Delicious-it's really good over white rice! i add frozen peas and some sliced mushrooms. also, i don't use celery salt and use a little white wine instead of cooking sherry. DH loved this!
(i also only used 5-6 chicken cutlets not 10)

INGREDIENTS (Nutrition)
10 skinless, boneless chicken breast halves
1 teaspoon fresh lemon juice
salt and pepper to taste
1/8 teaspoon celery salt
1 teaspoon paprika
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
1/3 cup dry sherry
1/4 cup grated Parmesan cheese

DIRECTIONS
Rinse the chicken breasts and pat dry. Season with the lemon juice, salt, pepper, celery salt and paprika to taste. Place in a slow cooker.
In a medium size bowl mix the mushroom and celery soups with the sherry/wine. Pour mixture over the chicken breasts and sprinkle with grated Parmesan cheese.
Cook on LOW setting for 8 to 10 hours, OR on HIGH setting for 4 to 5 hours.

My ALL TIME Favorite Beef Stew

3lbs stew meat in 1" cubes
6 carrots cut into 1/2" chunks
4 potatoes peeled and cubed
1 lg. onion quartered and sliced
2 lg. garlic cloves minced
1 envelope Lipton onion soup mix (or Beefy Onion)
3/4 c. ketchup
1 tbs. soy sauce
3 tbs. cornstarch
2 cups water + 3 tbs.

Place beef (you don't have to brown it first), carrots, potatoes, onions, and garlic in Crock Pot. In bowl whisk together water, onion soup mix, ketchup, and soy sauce. Pour over beef and vegetables. Toss to combine. Cover and cook on low setting for 6-8 hrs.

After everything is cooked transfer the meat and veggies to a bowl. Increase Crock Pot to high heat setting and skim the fat from the sauce. Which together cornstarch and 3 tbs. water to make a paste. Stir mixture into the stew sauce and cook 15 min. until thickened. Return meat and veggies to the pot, mix well, heat through, and serve.

-------------------------------------------------

Homemade Chicken Soup

1 package split chicken breasts with skin and bones
A few large carrots sliced into "pennies"
A few stalks of celery
1 or 2 large onions sliced up
Parsley, salt and pepper to taste
Chicken bouillon cubes (3-4)

Place chicken in Crock Pot. Add all the veggies and seasonings, and cover with water. Cook on low until chicken falls from the bone. (about 8 hrs) Pull the chicken out. Remove all skin and bones. Shread the chicken in big pieces and put back in pot. On the stove boil either large egg noodles or orzo pasta and serve with the chicken soup. DON'T add the pasta to the soup directly, it will absorb ALL the liquid. Add pasta directly to your bowl and cover with soup.

-----------------------------------------------

Italian Tomato Sauce

About 1-2 lbs. sweet Italian sausage with fennel
4 lg. cans crushed tomatoes
Crushed garlic - a few cloves
Parsley, salt and pepper to taste
Frozen fresh basil cubes (in freezer section)
Olive oil

Brown the sausage and cook mostly through on the stove. Remove sausage and saute onion until translucent and soft. About 10 min. Add garlic and saute for another minute. Transfer ALL the oil, fat, sausage bits, onions and garlic from the pan to the Crock Pot. Add all the tomatoes and seasonings. Add in the sausage and let the sauce cook for a good 8-10hrs. on low. The longer you let it cook the better and richer it tastes. Add any additional seasoning as necessary.

Re: Please share your favorite Crock Pot recipe

Beef shortribs from Bon Appetit- this one is delish- i'm actually making tomorrow- I like to serve w/ mashed potatoes

INGREDIENTS
4 1/2 pounds 3-inch-long beef short ribs
Coarse kosher salt
2 cups dry red wine
1 14.5-ounce can diced tomatoes in juice (I used fire-roasted tomatoes for extra depth of flavor)
1 6-ounce package sliced button mushrooms (I used sliced baby bellas)
1/2 cup finely chopped onion
6 garlic cloves, peeled
6 fresh Italian parsley sprigs
2 bay leaves
Crusty bread
PREPARATION
Sprinkle ribs with coarse salt and pepper. Place in even layer in slow cooker. Add next 7 ingredients, cover, and cook on low heat until meat is tender, about 8 hours (for me, it took about 9)
Using slotted spoon, transfer ribs to serving bowl. Discard parsley and bay leaves. Spoon fat off top of sauce and pour sauce over ribs. Serve with bread.
