Pot Roast


Ingredients

* 2 (10.75 ounce) cans condensed cream of mushroom soup
* 1 (1 ounce) package dry onion soup mix
* 1 1/4 cups water
* 5 1/2 pounds pot roast

Directions

1. In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.
2. Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.




I make this all the time but don't put in the water or pre-mix. I just put the soup on the meat and then sprinkle the onion mix over it Chat Icon

Another SUPER easy one:

4-5 pounds bottom round or rump roast
2 cans of diced tomatoes
chopped garlic

Put meat in, pour tomatoes with juice over and then put dollops of chopped garlic to taste on top. Cook the same as the above recipe. Serve with orzo.

Here is mine:

Crockpot Southwestern Chicken

Ingredients
2-16 oz. cans of sweet corn, drained
1-16 oz. can black beans, rinsed and drained
1-16 oz. jar of salsa (mild-hot, your preference)
3 whole boneless, skinless chicken breasts
1 cup low fat or fat free shredded cheddar cheese

Directions

Combine corn, black beans and 1/2 cup of salsa in the slow cooker.
Place chicken breasts on top.
Pour remaining salsa over the chicken.
Cover and cook 7-8 hours on low or 3-4 hours on high.
Sprinkle with cheese to serve.

I made this for dinner last night and it was yummy!!

Amazing Pork Tenderloin

1 (2 pound) pork tenderloin
1 (1 ounce) envelope dry onion soup mix
1 cup water
3/4 cup red wine
3 tablespoons minced garlic
3 tablespoons soy sauce
freshly ground black pepper to taste


Directions
1.Place pork tenderloin in a slow cooker with the contents of the soup packet. Pour water, wine, and soy sauce over the top, turning the pork to coat. Carefully spread garlic over the pork, leaving as much on top of the roast during cooking as possible. Sprinkle with pepper, cover, and cook on low setting for 4 hours. Serve with cooking liquid on the side as au jus.

Sunday Night Football Dinner in Front of the TV meal!! (plus leftovers for the week)

Buffalo CHicken Wing Soup

he Ingredients.

--2 cups cooked and cubed chicken
--1/2 yellow onion, chopped
--3 stalks celery, chopped
--1/4 cup unsalted butter
--1/4 cup flour (I used rice flour)
--2 cups fat free milk (no higher content than 2%, or it will curdle)
--3/4 cup chicken broth
--4 oz Velveeta
--1/2 cup hot wing sauce
--1/2 tsp celery salt
--1/2 tsp garlic salt

The Directions.

A 4 to 6 quart crockpot will work well for this soup.

Make a roux with the flour and butter. I usually use the stove top, but tried the microwave yesterday---it worked great. In a bowl, melt the butter on high for 45 seconds, then whisk in the flour. Set aside.

Chop up the onion and celery, and dump it into your crockpot. Add the cooked and cubed chicken. Pour in the chicken broth and milk. Add Velveeta. Add the salt (note: this is saltier than I am used to. If you are on a lower sodium diet, omit the salt all together. The cheese and the broth are pretty salty on their own. You can always season to taste after cooking.)

Stir in the flour and butter mixture. Add hot sauce.

Cover and cook on low for 6-8 hours, or on high for 3-4. The soup is done when the celery and onion reach desired tenderness and the flavors have melded.

I'm loving all these recipes but why when using the crockpot does it say to brown/cook your meats before placing them into the crock pot? When I bought mine the directions said this which is why I returned it. I just felt what was the point of preparing (cooking) something first before using it in the crock pot.

There are certain recipes I have tried without the browning. They came out fine. I feel the same as you, if I need to use an additional pot, it's not worth my effort!

I made a new one yesterday and it really hit the spot:

I attempted to make a version of this recipe from allrecipes.com: Chicken Tortilla Soup

It was more (should have been) this:
I didn't have the enchilda sauce but I did have a package of El Paso Enchillda dinner kit so...

3 Frozen Chicken Breasts (insted of 1 lb cooked/shredded)
2 small can of petite diced tomatoes (didn't have a large can)
1 can black beans
1/2 season package from the kit
whatever enchilda sauce was in the kit
1 cardboard container chicken stock/broth
1 small tomatoe can of water
onion/garlic
NO SALT

For the tortilla's - you can sprinkle the remainder of the season packet on the tortillas before you bake them off.

It was very good - didn't taste too watery or too spicy.

I did mix in shredded cheddar to my bowl.

The recipe called for 4 oz chopped green chilies - i had a can of tomatoes w/ chilis so I used that

The reason for the recipe was to clean out the pantry - I had a lot of tomatoes and a lot of black beans.


ETA: I also put some brown rice in my bowl.

I just made this one the other night:

Chicken and Apples

2 apples peeled, cored and sliced into rings
1 onion sliced thinly
1 lb. boneless skinless chix cutlets sliced thin
1 can chicken broth
2 cans condensed cream of celery soup
2 TBSP rosemary or thyme
salt and pepper to taste

Layer the apples, on the bottom of the crockpot, then on top of that layer the onion, then ontop of that the chicken. Mix the condensed soup with the chicken broth, pour over layered ingredients, then add the rosemary ontop. Cook 4-6 hours.
I added a little apple cider vinegar and it gave a nice little kick.



We made this earlier this week and it was YUMMY!!!!

Pork Chops and Apples

Ingredients:
•6 pork loin chops, about 1-inch thick, trimmed of visible fat
•2 tablespoons vegetable oil
•salt
•6 tart apples, such as Granny Smith, cored and thickly sliced
•1/4 cup currants or raisins, optional
•1 tablespoon lemon juice
•1/4 cup brown sugar
Preparation:
Brown chops in oil over medium heat. Sprinkle with salt. Place pork chops in the slow cooker/Crock Pot; combine remaining ingredients and pour over the pork chops. Cover and cook on low for 7 to 9 hours, or on high 3 to 4 hours.

**I did NOT brown the pork chops 1st
**I served over rice but you can use egg noddles too!

Slow Cooker Lasagna!! SOOOOOOOOOOO YUMMMMMMMY!!!!

1-1/2 pound lean ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (29 ounce) can tomato sauce ( I like barilla or Clasico)
1 1/2 teaspoons salt
1 teaspoon dried oregano
1 (12 ounce) package lasagna noodles ( I love Barilla ridged lasagna noodles)
16 ounces Ricotta Chees ( I like Sorento)
1/2 cup grated Parmesan cheese
16 ounces shredded mozzarella cheese (I like to use whole or part)

1.In a large skillet over medium heat cook the ground beef, onion, and garlic until brown.

2.In a large bowl mix together the Ricotta Cheese, Oregano grated Parmesan cheese, and 1/2 of the cooked ground beef.

3. Mix the remaining ground beef to sauce.

4.Spoon a layer of the meat sauce mixture onto the bottom of the slow cooker. Add a double layer of the uncooked lasagna noodles. Break to fit noodles into slow cooker. Top noodles with a portion of the cheese mixture. Repeat the layering of sauce, noodles, and cheese until all the ingredients are used. May sure the very top of your last layer is a layer of mozzarella cheese.

5.Cover, and cook on LOW setting for 4 to 6 hours.

**what I included in this recipe is after layer is done around the edges pour 1 cup of water. This will help it sticking and drying out. I also had purchased extra sauce for leftovers.

This was soo good my mom was surprised it came out of a crock pot!

Pulled Barbecue Pork Ingredients

The ingredients for this recipe are simple:
•1 pork shoulder (make sure the piece of pork will fit into your slow cooker)
•1/4 cup of water
•salt and pepper
•barbecue sauce-I LOVE SWEET BABY RAY'S!!! YUM!!
The secret ingredient: patience, as time really is the key to success for this southern delicacy!
Add the Pork to the Crockpot
First, warm your slower cooker for approximately 15 minutes before placing the piece of pork inside. Salt and pepper the meat and pour 1/4 cup of water in the slow cooker. Turn the temperature to high for one hour. After time has past, turn the heat down to low for approximately seven to nine hours.
Keep the Crockpot Covered
Throughout the cooking process, try to resist taking too many peeks under the lid of the slow cooker, unless to check the liquid level, and to add a quarter cup at a time if needed. Each glimpse allows for significant heat to escape and ultimately adds about 20 minutes to the cooking time.
Remove the Pork From the Crockpot
After a good night's sleep or a full day of work, the pork should be very tender. Using extreme caution as it is incredibly hot, remove the pork shoulder and discard the fat and juices that remain in the slow cooker.
Shred the Pork
Once the piece of meat has had a few minutes to cool, use a fork and knife to chop, or if you're not afraid to get your hands dirty, shred the pork by hand for a truly homemade look.
Continue Cooking the Pulled Pork
Once the chopping and shredding is complete, return it to the slow cooker.
Add the Barbecue Sauce to the Crockpot
Mix in your desired amount of barbecue sauce and cook on low for another hour. Remember I told you, patience really does pay.

Yesterday I made a variation of the salsa chicken and it was awesome. I used it to make quesadillas. Chicken nachos tonight I think. You could use it for filling for enchiladas, etc.

4 frozen chicken breasts
one large can of black beans
one small can green chilis
2 cans diced tomatoes
one packet taco seasoning (I actually used chili seasoning b/c that's all I had)
one bag of frozen corn
I added some garlic power, cumin and paprika

Lay the chicken on top of the veggies, cook on low for 7 hours. At 7 hours I shredded the chicken and put it back in the crock pot for another hour. WOW.

We LOVE McCormick's Italian Herb Chicken.
Just add the season pack along with
2-1/2# chix
2 can stewed tomatoes
1 can tomato paste
1 can mushrooms (optional)

I make it over angel hair pasta...

This is a Pot Roast Recipe, I got off a recipe website that is YUMMY

4 pounds chuck roast(must be 4 lbs)
salt and pepper to taste
1 packet dry onion soup mix
1 cup water
3 carrots, chopped
1 onion, chopped
3 potatoes, peeled and cubed
1 stalk celery, chopped


..DIRECTIONS
1.Take the chuck roast and season with salt and pepper to taste. Brown on all sides in a large skillet over high heat.
2.Place in the slow cooker and add the soup mix, water, carrots, onion, potatoes and celery.
3.Cover and cook on low setting for 8 to 10 hours.

Today I decided to combine both of these recipes, this is what I did:

4lb pot roast
3 large carrots, chopped
4 stalks celery, chopped
1 large onion, cut into 4 wedges and separated
12 small potatoes
1 can condensed cream of mushroom soup
1 cup red wine
1 packet onion soup mix


I whisked the mushroom soup and red wine together in the bottom of the crock pot. Then I added the veggies, and put the pot roast on top of that. I cracked fresh pepper over the top and then sprinkled the onion soup mix over everything. I did not brown the meat beforehand - I never do.

Right now it's set for 8 hours on low, when I get home I'll check it.

The recipes I read online said that using 2 cans of soup + water made too much gravy, so that's why I modified my recipe a bit. I can't wait to see how it turns out!

I used regular potatoes instead of red and I didn't use the celery seed since I didn't have that, but could that have made it taste so horrible?! This is what I made...

2 lbs. boneless, skinless chicken breasts, washed, patted dry, cut into 1-inch cubes
1 onion, diced
3 large carrots, peeled, cut into 1-inch-thick slices
4-5 redskin potatoes, peeled, cut into 1-inch cubes
2 cans (14 oz. each) chicken broth
1 tsp. celery seed
1 tsp dry thyme leaves or Mrs. Dash all purpose seasoning
1/2 tsp black pepper
8 oz. mushrooms, cleaned, halved
1 C. frozen corn or 1 can corn, drained
1 C. frozen peas
If you like a tomato based stew, add drained diced tomatoes also.


Place all ingredients, except peas, in crockpot and stir. Cook on LOW 7-9 hours or HIGH 4-6 hours. Add peas about 20 minutes before serving.

The only think I can think of is if you used low sodium broth, there wasn't enough salt in the dish... and I never cook peas, even frozen ones, more than a few minutes, or they get mushy. Did it taste bad, have no taste, was the chicken dry... ?
