This is AMAZING!
Salsa Chicken
6 chicken cutlets, thin sliced 1 jar reduced fat cream of mushroom soup 1 packet taco seasoing 1 jar salsa 1 can diced tomatos with green chili (Rotel) 1/2 cup sour cream
Place chicken cutlets in bottom of crock pot and sprinkle with taco seasoning. In a large bowl combine all other ingredients. Pour over chicken and place on low 7-8 hours. Serve with rice or wrap in tortillas.
This makes an incredibly creamy shredded chicken mixture that you can eat by the bowl, wrap in tortillas or taco shells, or serve over rice with corn.

Ingredients 1 pound ground round 1 cup chopped onion 1/2 cup chopped green bell pepper 1/4 cup dry red wine or water 1 tablespoon chili powder 1 teaspoon sugar 1 teaspoon ground cumin 1/4 teaspoon salt 1 garlic clove, minced 1 (15-ounce) can kidney beans, undrained 1 (14.5-ounce) can Mexican-style stewed tomatoes with jalapeño peppers and spices, undrained 6 tablespoons (1 1/2 ounces) shredded reduced-fat extra-sharp cheddar cheese Preparation Cook the ground round in a large nonstick skillet over medium-high heat until brown, stirring to crumble. Add chopped onion and the next 7 ingredients (onion through garlic), and cook for 7 minutes or until onion is tender. Place meat mixture in an electric slow cooker, and stir in beans and tomatoes. Cover with lid, and cook on low-heat setting for 4 hours. Spoon into bowls; sprinkle with cheese.
Note: The chili can be made on the stovetop if you don't have a slow cooker. After adding the beans and the tomatoes, bring to a boil. Reduce heat; simmer, partially covered, 1 1/2 hours.

I also add diced jalapenos and 1 can of tomato paste (I like it saucey) I leave out the pepper if I don't have any on hand

Chicken stroganoff
4-5 chicken breast (boneless) 1 16oz container of sour cream 1 can cream of mushroom soup 1 package onion soup mix
Put FROZEN chicken in crockpot. Mix all ingredients above in a bowl and then pour over chicken. Cook on low 6-7 hrs.
Serve over egg noddles.

I buy the different crock pot sauces from Williams Sonoma and then I throw in some chicken thighs and/or breasts. I then add in some veggies like potatoes, carrots, onions, or even fruit like figs or apricots. I then serve over rice.

This is a Pot Roast Recipe, I got off a recipe website that is YUMMY
4 pounds chuck roast(must be 4 lbs) salt and pepper to taste 1 packet dry onion soup mix 1 cup water 3 carrots, chopped 1 onion, chopped 3 potatoes, peeled and cubed 1 stalk celery, chopped
..DIRECTIONS 1.Take the chuck roast and season with salt and pepper to taste. Brown on all sides in a large skillet over high heat. 2.Place in the slow cooker and add the soup mix, water, carrots, onion, potatoes and celery. 3.Cover and cook on low setting for 8 to 10 hours.

4 large skinless, boneless chicken breast halves, cut into cubes 10 medium red potatoes, quartered 1 (8 ounce) package baby carrots 1 cup chopped celery 2 (26 ounce) cans condensed cream of chicken soup 2 cubes chicken bouillon 2 teaspoons garlic salt 1 teaspoon celery salt 1 tablespoon ground black pepper 1 (16 ounce) bag frozen mixed vegetables
1.Combine the chicken, potatoes, carrots, celery, chicken soup, chicken bouillon, garlic salt, celery salt, and black pepper in a slow cooker; cook on High for 5 hours. 2.Stir the frozen mixed vegetables into the slow cooker, and cook 1 hour more.

Chicken and Dumplings • 4 boneless skinless chicken breasts, cut in small chunks • 2 cans condensed cream of chicken soup • 1/4 cup onion, finely diced • 2 cups water • 1 chicken bouillon cube • 2 10 ounce packages refrigerated biscuits Combine all ingredients, except biscuits, in a crock pot. Cover and cook on low for 5 to 6 hours. 40 minutes before serving turn crock pot on high. Tear or cut biscuit dough into 1-inch pieces. Add to your crock pot; stirring gently. Cover and cook on HIGH for an additional 30 minutes or until biscuits are fluffed up and cooked through.

chicken tacos- this is a Martha recipe
6 boneless, skinless chicken thighs (must be dark meat- white will dry out)
1/2 cup prepared, jarred salsa
5 cloves garlic thinly sliced
1-2 chipotle chilis in adobo sauce (find in the Goya section)
1 tbs chili powder
salt & pepper
Combine above ingredients in slow cooker and cook on low for 8-9 hours. When done, shred chicken in a bowl, and moisten w/ juices.
Serve w/ taco shells, sour cream, cheese, lettuce, etc.
Sounds REALLY good! Can't waut to make this!

I'll add a really easy yummy one:
Loin of pork (I use a pretty large one, 3 or 4 pounds maybe so we have leftovers!)
1 pkg sauerkraut drained 2 golden delishous apples peeled, cored & diced 1 large vidalia onion chopped salt, pepper & garlic powder to taste 3 cups water
mix everything & put 1/2 on bottom of crockpot, put roast down in it,then rest of mixture on top
When it's done,I strain out juices, add gravy master & thicken on stove top as a gravy.
Pull pork apart (it shreds!!). Servce with mashed potatoes or we like it on rolls!!

I posted this one on the Food & Recipes board a few weeks ago. It's a favorite for DH, DS and I:
Ropa Vieja Slow Cooker Recipe
Serves: *9*
2 tablespoons vegetable oil 3 pounds beef flank steak 1-1/2 cups beef broth 12 ounces canned tomato sauce 2-3 medium onions, sliced 1 large green bell pepper, seeded and sliced into strips 1 large red bell pepper, seeded and sliced into strips 6 cloves garlic, mashed or minced 1 (6 ounce) can tomato paste 1/2 teaspoon dried oregano 1/4 teaspoon cayenne pepper 2 teaspoons chili powder 1/2 teaspoon chipotle powder or mexican chili powder 2 teaspoons ground cumin 3 tablespoons chopped fresh cilantro 2 tablespoons olive oil 1 tablespoon and 1-1/2 teaspoons white wine vinegar 2 bay leaves Crushed red pepper flakes (as much or as little as you want)
1. Heat vegetable oil in a large skillet over medium-high heat. Brown the meat on all sides. 2. Transfer meat to slow cooker. Pour all other ingredients into slow cooker. Stir until well blended. 3. Cover and cook on low for up to 10 hours. At 8-9 hour mark, check to see if meat is fork tender. If necessary, rotate the meat upside down and continue to let simmer in crock pot until fork tender. 4. When ready to serve, pull meat out of slow cooker and shred with two forks. Return shredded meat to slow cooker. 5. Serve with tortillas or rice/beans on the side.
Notes: DH couldn't find flank steak so we used an eye of round roast that was tied in rope.
I love cilantro, so I threw in a huge handful and didn't really measure it. I'm pretty sure I used more than 3 tablespoons.

I also like making Beef Short Ribs in the slow cooker as well. The sauce is on the sweet side, but very tasty! This recipe came from recipezaar.com:
Slow-Cooker Beef Short Ribs
SERVES 6 1/3 cup flour 1 teaspoon salt 1/4 teaspoon pepper 2 1/2 lbs boneless beef short ribs 1/4 cup butter 1 cup chopped onion 1 cup beef broth 3/4 cup red wine vinegar 3/4 cup brown sugar 1/4 cup chili sauce 2 tablespoons catsup 2 tablespoons Worcestershire sauce 2 tablespoons minced garlic 1 teaspoon chili powder
1. Put flour, salt and pepper in a bag. 2. Add ribs and shake to coat. 3. Brown ribs in butter in a lg skillet. 4. Put in slow cooker. 5. In same skillet, combine remaining ingredients. 6. Bring to a boil, stirring. 7. Pour over ribs. 8. Cover and cook on low for 9 hours.

I think I'm in love with this thread! I just made this one the other night:
Chicken and Apples
2 apples peeled, cored and sliced into rings 1 onion sliced thinly 1 lb. boneless skinless chix cutlets sliced thin 1 can chicken broth 2 cans condensed cream of celery soup 2 TBSP rosemary or thyme salt and pepper to taste
Layer the apples, on the bottom of the crockpot, then on top of that layer the onion, then ontop of that the chicken. Mix the condensed soup with the chicken broth, pour over layered ingredients, then add the rosemary ontop. Cook 4-6 hours. I added a little apple cider vinegar and it gave a nice little kick.
