I just made this one the other night:

Chicken and Apples

2 apples peeled, cored and sliced into rings
1 onion sliced thinly
1 lb. boneless skinless chix cutlets sliced thin
1 can chicken broth
2 cans condensed cream of celery soup
2 TBSP rosemary or thyme
salt and pepper to taste

Layer the apples, on the bottom of the crockpot, then on top of that layer the onion, then ontop of that the chicken. Mix the condensed soup with the chicken broth, pour over layered ingredients, then add the rosemary ontop. Cook 4-6 hours.
I added a little apple cider vinegar and it gave a nice little kick.

Cranberry pot roast

I also add cut up red potatoes and whole baby carrots to the crock pot after an hour or so!

1 (1 ounce) envelope dry onion soup mix
1 (3 pound) beef chuck roast
1 (16 ounce) can jellied cranberry sauce
2 tablespoons butter
2 tablespoons all-purpose flour

..DIRECTIONS
1.Place onion soup mix in the bottom of a slow cooker. Place roast in the slow cooker, and top with cranberry sauce.
2.Cover, and cook 8 hours on Low.
3.Remove roast, and set aside. Set slow cooker to High. Whisk together butter and flour, and slowly mix into the liquid remaining in the slow cooker to create a thick gravy. Serve with the roast.

1 large bottle of honey mustard dressing over 5-7 pieces of chicken

This thread is awesome.

Here are two easy and tasty recipes. I just leave the ingredients on the counter, and my DH gets it started.

Family Style Chili
1.5 lbs ground beef or turkey (brown 1st or throw in raw).
2 15oz cans pinto beans, rinsed and drained
2 14.5oz canned stewed tomatoes
1 chopped onion - optional
1 chopped green pepper - alos optional
pack of taco mix
1 tb ranch salad dressing mix
*I add some hot sauce for fire.

serve with sour cream and tortilla chips

Pot Roast
3-5lb pot roast
2 cans cream of mushroom soup
1 and 1/4 cup water
1 package dry onion soup miz

I add carrots at the end, and bake biscuits.

I made a new one yesterday and it really hit the spot:

I attempted to make a version of this recipe from allrecipes.com: Chicken Tortilla Soup

It was more (should have been) this:
I didn't have the enchilda sauce but I did have a package of El Paso Enchillda dinner kit so...

3 Frozen Chicken Breasts (insted of 1 lb cooked/shredded)
2 small can of petite diced tomatoes (didn't have a large can)
1 can black beans
1/2 season package from the kit
whatever enchilda sauce was in the kit
1 cardboard container chicken stock/broth
1 small tomatoe can of water
onion/garlic
NO SALT

For the tortilla's - you can sprinkle the remainder of the season packet on the tortillas before you bake them off.

It was very good - didn't taste too watery or too spicy.

I did mix in shredded cheddar to my bowl.

The recipe called for 4 oz chopped green chilies - i had a can of tomatoes w/ chilis so I used that

The reason for the recipe was to clean out the pantry - I had a lot of tomatoes and a lot of black beans.


ETA: I also put some brown rice in my bowl.

I make this one all the time, and it's delicious! I serve it over brown rice, and use reduced fat soup and sour cream.

Yumm....I forgot about this. I made this last year and it was so good! I have to add this to my menu this week-perfect fall meal!

This is a super easy chicken recipe that my husband really loves and I made it once for my dad and he asked for the recipe right away.
Chicken (which every kind you have is fine)..I make it with 5-6 frozen breasts.
1 jar of your favorite salsa
Now for the "whatever you have in the house part"
throw in frozen or canned corn
a can of black beans
frozen pepper strips
diced onions
frozen or canned peas
canned white beans

You can literally put as little or as much of the stuff in as you want.
Just leave it in the crock pot for 4 hours on high or 7-8 on medium.
I serve it over rice. You can even pick some up at the Chinese food place.

I Make this soup ALL the time, I love it, best I ever made ....


I add a bit more spices like Onion powder, a tiny bit of garlic powder, some Rosemary and thyme and celery salt.

And I just use plain frozen chicken breast, cooked first in the oven...you can probably cook them right in the Crockpot but I add spices and like them cooked first..

Lazy Slow Cooker Creamy Chicken Noodle Soup

SERVES 8

Ingredients
4 cups cooked chicken, chopped (from a store bought chicken?)
1 cup onion, diced
1 cup celery, diced
1 cup carrot, diced
1/2 cup frozen peas
4 (14 ounce) cans low sodium chicken broth
1 (10 3/4 ounce) can condensed cream of celery soup
1 (10 3/4 ounce) can condensed cream of chicken soup
2 teaspoons fines herbes (chervil, chives, parsley, and tarragon)
salt
pepper, tp taste
2 cups egg noodles, cooked

Directions
1Remove skin from the chicken and chop the meat.
2Put the chicken into a slow cooker with the onions, celery, carrots and peas.
3Stir in broth, mushroom soup, and fines herbs. Season with salt and pepper.
4Cover and cook on high for 3 to 4 hours or low for 8 to 9 hours.
5When soup is finished, stir in egg noodles.
6Season to taste and serve. Enjoy!

Minestrone soup:

28 (two cans) oz veg or chicken broth

1 can cannellini beans

2 medium zuccini

4 carrots

2 stalks of celery

1 onion (med)

2 cups spinach - chopped

Bay leaf

1/2 tsp thyme, sait, pepper to taste

2 cups uncooked Ditalini pasta

all ingredients (except pasta) in crock pot for 8 hours on low or 4 hours on high

cook pasta separately.

* recipe does not call for any oil, but sometimes I use a little olive oil too

Slow cooked Meatloaf


INGREDIENTS
1 can (10 3/4 oz) condensed tomato soup
1/2 cup Old El Paso® Thick 'n Chunky salsa
1/4 cup water
1 1/2 lb lean (at least 80%) ground beef
1/2 cup uncooked instant white rice
1/2 cup chopped onion
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, finely chopped
1 egg
DIRECTIONS
1. In small bowl, mix soup, salsa and water.
2. In large bowl, mix ground beef and all remaining ingredients plus 1/2 cup of the tomato soup mixture. Shape mixture into oblong loaf no longer than diameter of slow cooker. Carefully place meat loaf in bottom of 3 1/2- to 4-quart slow cooker. Pour remaining tomato soup mixture over meat loaf.
3. Cover; cook on Low setting 7 to 9 hours.
4. To serve, carefully remove meat loaf from slow cooker; let stand 5 minutes. Cut into 6 slices; place on serving platter. Spoon sauce from slow cooker over meat loaf.

Mongolian Beef

1.5 pounds of either stew meat or sliced flank steak

1/2 cup chopped green onions

2 cloves garlic - minced

1/2 cup soy sauce

1/2 cup hoisin sauce

1/2 cup water or beef broth

some freshly grated ginger (or ginger powder)

tblsp brown sugar

Cracked pepper

I also like to add mushrooms and either green peppers or green beans towards the end.

Put it all in the crock pot and cook for 6-8 hours. Toward the end make a slurry with cornstarch the broth in the pot and add back in for about 30 minutes. Serve over brown or white rice!!

These are great! I've been experimenting with my crock pot lately. I've tried some Trader Joe's sauces and they turn out too salty, but I just did frozen chicken breasts with jarred tomato sauce and added a whole bunch of veggies - peppers, onions, garlic, and mushrooms - and a can of plain tomato sauce - and it turned out very yummy! Always looking for other recipes to try!

I made pot roast just the other day
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (1 ounce) package dry onion soup mix
1 1/4 cups water
5 1/2 pounds pot roast
mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.
2.Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.
I added potatoes and carrots on the bottom and it all came out YUMMY!!!
Also found one for a chicken that I am planning on trying soon
1 (2 to 3 pound) whole chicken
salt and pepper to taste
1 teaspoon paprika
1.Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
2.Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil.
3.Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.
Only instead of foil I plan on using sweet potatoes and regular potatoes (DH doesn't like sweet potatoes)

This is AMAZING!

Salsa Chicken

6 chicken cutlets, thin sliced
1 jar reduced fat cream of mushroom soup
1 packet taco seasoing
1 jar salsa
1 can diced tomatos with green chili (Rotel)
1/2 cup sour cream

Place chicken cutlets in bottom of crock pot and sprinkle with taco seasoning. In a large bowl combine all other ingredients. Pour over chicken and place on low 7-8 hours. Serve with rice or wrap in tortillas.

This makes an incredibly creamy shredded chicken mixture that you can eat by the bowl, wrap in tortillas or taco shells, or serve over rice with corn.



I've made this a bunch of times and it's really good! It's one of DH's favorites! thanks for the recipe!

I make Rachael Ray's Montalcino Chicken in the crock pot even though it's not a crock pot recipe- I just take all the ingredients and throw them in there at once, and then make the gnocchi when it's almost ready. Sorry I can't say how long it takes- I just take it out when it looks done- maybe 3 hours on high? I use the boneless tenders and they break themselves up nicely while cooking.

Recipe

For my enchiladas (I am a bit picky) I put in a can of red beans, a can of black beans, a pound or so of chicken chunks, a can/jar of enchilada sauce, some onion, garlic, pepper. There is very little fat- a small drizzle of olive oil. When it's done I layer the corn tortillas and cheese and put in the over for a few minutes. It's good because DH likes more cheese and filling than I do so it's easy to make to our individual likings.

I've never cooked with crock pot before, in general, whats the technique can you always throw frozen meat in there with some sauce?

Beef Barely Soup


Ingredients

* 2 pounds cubed beef chuck roast
* 5 cups water
* 4 cubes beef bouillon, crumbled
* 1/2 onion, chopped
* 1 (8 ounce) can tomato sauce
* 3/4 cup uncooked pearl barley
* salt and pepper to taste

Directions

1. In a slow cooker, combine beef, water, bouillon, onion, tomato sauce, barley, salt and pepper.
2. Cover, and cook on Low for 5 hours.
